INSTANT POT PORK SIRLOIN ROAST WITH APPLE & FENNEL • BARE Peel and slice the onion to the same thickness. Once the pork is browned, remove it from the Instant Pot and set it aside. If the bottom of the pan appears dry, add more cooking fat. Add the apple, fennel, onion, garlic, sea salt, and black pepper. Cook until softened, about 10 minutes. SALMON SALAD WITH HONEY LIME VINIAGRETTE • BARE ROOT GIRL Directions: Season all sides of the salmon with cumin, garlic salt, and pepper, to taste. Heat a cast iron (or non-stick) skillet over medium-high heat. Once hot, add the avocado oil and then the salmon. Cook the salmon until brown on both sides, about 2-3 minutes per side for thicker belly pieces and 1-2 minutes per side for tail pieces. CELERY ROOT & TURNIP VEGETABLE MASH • BARE ROOT GIRL Directions: With a sharp knife, cut the rough outer layer off of the celery root. Chop into small cubed pieces. Peel the turnips and cut into similar sized cubes. Add them to a medium pot of boiling water. Add a generous pinch of sea salt to the water and bring to a boil. Simmer until fully cooked, about 15-20 minutes. STRAWBERRY ROSEMARY SHRUB (AN EASY DIY PROBIOTIC DRINKING To 2nd ferment the shrub, use the following ratios for a 32 oz. flip-to jar: 1/2 cup of shrub. 1 cup of fruit juice or crushed fruit. 2 cups filtered water.
