COOKING ALA MEL
healthy recipes and the occasional craft. Growing up, my absolute favorite days in elementary school was when we had oreo fluff as part of our lunch in the cafeteria. BUCKWHEAT APPLE CAKE (GLUTEN FREE) This week marks the first week of the semester that I really need to hunker down and start studying like crazy.. 3 exams next week! SALTED CARAMEL HOT CHOCOLATE MIX (WITH FREE PRINTABLE Today, Alex and I drove back to Buffalo with the kitties from our fun-filled (and super busy) holidays with my family in PA. The weather was perfectly clear the entire way, which is always a surprise in January, since we drive right along Lake Erie for about half the trip. Although the weather was perfect, CINNAMON RAISIN BREAD (WHOLE WHEAT) Duh. Cinnamon raisin bread! I found a great recipe as a jumping off point, and made my own adaptations as I went. Guys, I can’t tell you how much I loved this bread. This is one of the first times I’ve had a totally soft and fluffy bread that is 100% whole wheat. CREAMY GREEK YOGURT MAC & CHEESE This mac & cheese has become the most popular recipe here on cooking ala mel, with good reason! This is one dish that we make over and over again for how delicious it is, how quick it is, and how it’s a bit better for you while still maintaining it’s comfort food status! COFFEE FROZEN KEFIR (OR COFFEE FROZEN YOGURT) This frozen kefir is a great pick me up during the day from the boost of coffee, and it’s the perfect summer treat! I used an unrefined cane sugar and a bit of stevia to sweeten this, but I’d like to think it’s a far cry better than the frozen yogurt you’ll find at your local frozen yogurt/ice cream shop. BUCKWHEAT CORN MUFFINS (GLUTEN FREE) It’s officially cold here in Buffalo. That means I want soup.. all. the. time, which I’m sure you’ve noticed. And lots and lots of tea. One of my favorite pairings for a nice spicy, warming bowl of soup is cornbread muffins! I served these up with some chipotle blackbean soup (which I
WHITE PIZZA WITH ROASTED RED PEPPERS, MUSHROOMS, SPINACH Preheat the oven to 450ºF. Brush the prepared pizza dough with olive oil; sprinkle with garlic and salt. Top with cheeses until covered except for about 1 inch from the edge of the crust. APLETS (APPLE WALNUT TURKISH DELIGHT) One of my all time favorite fantasy series is The Chronicles of Narnia. WHOLE WHEAT CIABATTA Stir the yeast, water, and flour together in a small bowl, until it forms a paste. Continue stirring until it resembles a shaggy dough; this is to help build the gluten. CHOCOLATE CAKE WITH SALTED CARAMEL FILLING Take the chilled cake layers and place one layer on a 8-inch cake board, glued into place by a pea sized amount of frosting. Place half of the salted caramel frosting filling in the center of the layer, and spread with a small offset spatula to about 1/2 inch away from theedge of the cake.

MOCHA OREO COOKIE BALLS Every year, we have Christmas Eve dinner at my aunt’s house. One year, she made OREO truffles (OREO cookie balls), and she’s pretty much not allowed to not make them ever again. Have you ever had an OREO cookie ball? They’re addicting, in the most rich, chocolatey way. The best way, in ROASTED WORCESTERSHIRE POTATOES We roast a lot of potatoes. They’re tasty, you can top them with pretty much anything, and they keep extremely well for long periods of time. Instead of the usual garlic, onion, salt, pepper deal, Alex decided to douse them in Worcestershire. I was a bit weary at first, but wow. They were extremely crispy CHEESY STUFFED BANANA PEPPERS (GLUTEN FREE) One of our favorite things to make in the summer is stuffed banana peppers. We usually buy a whole bunch from the farm stand down the street or at the farmer’s market, stuff them all, and eat them for days and days. This year, we got them 10 for $2, so we made lots. Growing up, my absolute favorite days in elementary school was when we had oreo fluff as part of our lunch in the cafeteria. Light and fluffy oreo goodness — the perfect treat. This homemade version is much richer than what we had in those days… as I’m sure the original oreo fluff I remember was cool whip mixed in with oreos andlittle else.
My version is made with allllll the good stuff, but super simple: whipped cream, loads of oreos, a little powdered sugar, and some gelatin to make it stand on its own a little better. Just those few ingredients creates the best oreo fluff you’ll ever eat. It’s super rich, so a little goes a long way — which means you get to eat it for a longer time with leftovers!!*

DOUBLE CHOCOLATE BANANA BREADMarch 15, 2019
There are few things better than a fluffy piece of chocolate cake — this double chocolate banana bread makes you feel like you’re eating a piece of cake without filling you up with a load of sugar. Soft and fluffy, rich chocolate flavor without the sugar crash later. Would you believe that it had actually been months and months since I bought bananas before making this double chocolate banana bread? I went through a phase where I’d buy some bananas, maybe eat one or two, and then promptly they’d be beyond the point where I want toeat them.

Sometimes, all you need is a soft and chewy chocolate chip cookie. These almond flour chocolate chip cookies are a slightly healthier version to your favorite classic! They’re perfect with a cup of tea or coffee, as an afternoon snack, or for when you need a quickdessert!
I love using almond flour to pack a healthier punch to my favorite dessert recipes. It adds in healthy fat and protein, which eliminates the sugar spike and crash that makes you feeling all yucky afterwards. The almond flour lends a nutty flavor, as well, which always adds a nice touch in a cookie!*
