BANG BANG SCALLOPS
METHOD: Add 2 tbsp shredded coconut to a cool non-stick skillet. Set over medium-low heat and dry-toast the coconut until golden brown. Transfer to a bowl and set aside. Rinse and pat scallops dry with paper towel and season with paprika, cayenne, garlic powder, salt and pepper. Heat avocado oil in a stainless-steel or non-stick skilletover

Add TOSTONES WITH AVOCADO CREMA Return the smashed plantains back to the oil and fry for an additional 2-3 minutes per side or until golden brown and crispy. CHICKEN WITH MUSHROOM AND TARRAGON CREAM SAUCE Season with black pepper. Bring the sauce to a simmer and reduce by 1/2 – approximately 5-7 minutes. Taste sauce for seasoning and adjust as needed. Add the chopped tarragon at the very last minute. Transfer browned chicken to a serving platter and spoon the SLOW-COOKER COCHINITA PIBIL Cochinita Pibil, or Puerco Pibil, is a Yucatán-style, slow-roasted pork. Though recipes differ, it is commonly made by first marinating a whole suckling pig in a mixture of achiote (or annatto) seeds, cloves, all spice, oregano, sour orange, garlic, and other spices or herbs. WHOLE30 CHICKEN SHWARMA For Chicken Shwarma. Rinse and pat chicken dry with paper towel. Slice into thin strips, width-wise, and transfer to mixing bowl along with all of the spices and 2 tbsp avocado oil. Preheat cast-iron skillet over med-high heat. Transfer browned meat to a bowl. Drop the heat to medium-low, add the diced onion and serrano peppers. Sauté until onions are soft and translucent – approximately 8 minutes. Add the garlic and cook an additional 60 seconds. Add the paprika, onion powder, coriander, ancho chili powder, oregano, cumin, and cayenne.ASIAN SMOKED SALMON
Squeeze as much air out of the bag as possible, seal and refrigerate 3-4 hours. Remove salmon, pat very dry with paper towel and place on a parchment-lined baking sheet. Discard brine. Cook, stirring occasionally, until the liquid has reduced in volume by half. Add the sesame oil, black pepper and cooked chicken pieces. Carefully toss everything to coat. Transfer the chicken to a serving platter, season with sesame seeds and serve immediately. ALABAMA WHITE BBQ SAUCE Instructions. Add all ingredients to a mason jar or small mixing bowl and stir to combine. Cover and refrigerate at least 30 minutes before serving. *Will keep for up to 5 days in the fridge.
