Food and Travel Inspiration: from Washington, DC and beyond, follow me as I eat and travel around the globe. AN OUTDOOR ADVENTURE: VERMONT'S INN TO INN WALKING TOUR When it became apparent in 2020 that travel via an airplane was out of the question, my husband and I decided to take a local vacation that was within driving distance from D.C. I did some research for an outdoor-centric trip and came across the perfect option: The Vermont Inn-to-Inn Walking Tour! This walking tour RECIPE: ARROZ CON POLLO, PUERTO RICAN STYLE ⋆ THE DINING Arroz con Pollo When I think of easy Puerto Rican recipes, arroz con pollo always makes the top of the list. With juicy chunks of meat, it’s the perfect one-pot meal. Serve it with a side of habichuelas guisadas (stewed beans) and plantains, and you can transport yourself to the Caribbean. This dish is RECIPE: HOW TO MAKE ARROZ CON GANDULES ⋆ THE DINING TRAVELER Instructions. Heat Oil in Caledro. While the oil heats, rinse the rice in a mesh colander with cold water, set aside. Add salchichón to the oil and cook for a few minutes. Add sofrito, sauce, and gandules, achiote oil, and spices. Let it cook for 5 minutes until the flavorscome together.

Add broth (tip: make sure you only add enough broth to cover it) Cook for 15 minutes, covered in high heat. Prep garnish while cooking: Heat 2-3 tbsp of olive oil in a frying pan. Seasoned with spices such as ginger, cloves, and cinnamon, the flavor like no other rice pudding you’ve tasted. It’s popular during the holidays, but you can find it at panaderías (bakeries) across RECIPE: MAKING PERNIL ASADO AT HOME ⋆ THE DINING TRAVELER At 130 F, uncover the pernil and let it cook for an hour. This will allow the “cuerito” fat layer to brown and start to crispen. After an hour, the pernil will be around 155 F.
