Food and Travel Inspiration: from Washington, DC and beyond, follow me as I eat and travel around the globe. AN OUTDOOR ADVENTURE: VERMONT'S INN TO INN WALKING TOUR When it became apparent in 2020 that travel via an airplane was out of the question, my husband and I decided to take a local vacation that was within driving distance from D.C. I did some research for an outdoor-centric trip and came across the perfect option: The Vermont Inn-to-Inn Walking Tour! This walking tour RECIPE: ARROZ CON POLLO, PUERTO RICAN STYLE ⋆ THE DINING Arroz con Pollo When I think of easy Puerto Rican recipes, arroz con pollo always makes the top of the list. With juicy chunks of meat, it’s the perfect one-pot meal. Serve it with a side of habichuelas guisadas (stewed beans) and plantains, and you can transport yourself to the Caribbean. This dish is RECIPE: HOW TO MAKE ARROZ CON GANDULES ⋆ THE DINING TRAVELER Instructions. Heat Oil in Caledro. While the oil heats, rinse the rice in a mesh colander with cold water, set aside. Add salchichón to the oil and cook for a few minutes. Add sofrito, sauce, and gandules, achiote oil, and spices. Let it cook for 5 minutes until the flavorscome together.

DC OUTDOOR DINING: IGLOO, YURT, OR CHALET ⋆ THE DINING Indoor dining is still scary with covid-19, but I know many of us are tired of take-out and desperate to go out and eat in a restaurant. Well, outdoor dining in Washinton, DC has gotten pretty creative. Restaurants have built small outdoor dining establishments where you can dine privately with your family or friends, without NEW PICKS: PIZZA DELIVERY AND TAKE-OUT IN DC ⋆ THE DINING Ema Rossi: The Traditional Napoli Pizza Located in Rockville, MD, Ema Rossi may be a bit out of the way but the pizzas at Ema Rossi are totally worth it for pizza in the DC area. Made in a traditional Napoli style, the pizza dough at Ema Rossi is comprised of just non-GMO double zero flour imported from Naples, pure mineral water, sea salt, and live yeast. MAKING PAVOCHÓN, PUERTO RICAN STYLE TURKEY AT HOME ⋆ THE Chop the vegetables into 2-inch pieces. Pat dry the turkey. Make sure it’s fully thawed and dry. With a spoon, loosen the skin from the breast. With the spoon, spread the marinade between the skin and breast. With a spoon or silicone brush, brush the marinade all over the turkey. Make sure to add seasoning to the cavity. RECIPE: MAKING PERNIL ASADO AT HOME ⋆ THE DINING TRAVELER At 130 F, uncover the pernil and let it cook for an hour. This will allow the “cuerito” fat layer to brown and start to crispen. After an hour, the pernil will be around 155 F. At this time, place the oven in “Broil” for 15-30 minutes to get that crisp cuerito (fat layer). Note: Pork is fully cooked at 160 F. I did some research for an outdoor-centric trip and came across the perfect option: The Vermont Inn-to-Inn Walking Tour!
