SOUPS | DONNA HAY
classic miso soup with tofu, green onion and crispy wakame. soups. creamy cauliflower, chicken and split pea soup with spiced seeds. soups. creamy chicken and corn chowder. soups. creamy potato and sauerkraut soup with hot smoked salmon. soups. crispy pork ramen with chilli and garlic oil. CHILLI JAM | DONNA HAY This sweet and savoury roasted chilli jam (or nam prik pao) is ubiquitous in Thai cooking and is made from chillies, garlic, dried shrimp and a handful of other ingredients. You can eat the chilli jam straight from the jar as a dipping sauce, use as a marinade or add it to your favourite Asian-style dishes.FRENCH ONION SOUP
METHOD. Heat the butter and oil in a large, heavy-based saucepan over high heat. Add the onions and garlic and cook, stirring constantly, for 22–25 minutes or until light golden. Add the sugar, flour and thyme and cook, stirring constantly, for 1 minute or until well combined. Gradually stir in the stock and vinegar, and bring to asimmer.
LEMON CURD | DONNA HAY 150g cold unsalted butter, chopped. Place the eggs, egg yolks, sugar, lemon rind and lemon juice in a bowl and whisk to combine. Pour the mixture into a large saucepan over medium heat and cook, stirring for 2 minutes or until the sugar has dissolved. Reduce the heat to low and gradually add the butter, 3 pieces at a time, stirring continuously LEMON AND YOGHURT CAKE Preheat oven to 160°C (325°F). Grease a 2.5-litre-capacity Bundt tin. Place the oil, eggs, lemon rind, lemon juice, yoghurt and sugar in a large bowl and whisk to combine. Sift in the flour and whisk until smooth. Pour into the tin and bake for 50–55 minutes or until cooked when tested with a QUICK BUTTERFLIED ROAST CHICKEN Preheat oven to 220°C (425°F). Place the chicken, breast-side down, on a board so the back is facing up and the drumsticks are pointing towards you. Using sharp kitchen scissors or chicken shears, cut closely along each side of the backbone. Remove and discard the backbone. Turn the chickenBANANA BREAD
Preheat oven to 160°C (325°F). Place the butter, sugar and vanilla in an electric mixer and beat for 8–10 minutes or until pale and creamy. Scrape down the sides of the bowl. Gradually add the eggs and beat well to combine. Add the banana, flour, baking powder, bicarbonate of soda, cinnamon and STICKY MAPLE AND BOURBON PORK RIBS METHOD. Place the vinegar, water, bay leaves, cinnamon, sugar, rock salt and onion in a large saucepan over high heat. Stir to combine and bring to the boil. Add the ribs, reduce the heat to medium and cover with a tight-fitting lid. Simmer for 30–40 minutes or until the pork is tender. While the ribs are cooking, make the maple bourbon glaze. FRIED BROWN RICE WITH LETTUCE CUPS Place the chilli, sesame seeds, chia seeds, pepitas and crispy shallots in a bowl, stir to combine and set aside. Heat 1 tablespoon of the oil in a large non-stick frying pan or wok over high heat. Add the ginger and garlic and cook for 2–3 minutes or until golden. Remove from the pan with a CLASSIC SPAGHETTI AND MEATBALLS Place the breadcrumbs and milk in a large bowl and mix well to combine. Set aside for 5 minutes or until the milk is absorbed. Add the beef and pork mince, eggs, garlic, sage, salt and pepper and mix well to combine. Using wet hands, roll tablespoons of the mixture into balls. Heat 1 tablespoon of BAKED RICOTTA CHEESECAKE METHOD. Preheat oven to 150°C (300°F). Lightly grease a 22cm round springform cake tin and line the base with non-stick baking paper. Set aside. To make the base, place the flour, sugar and butter in a food processor and process for 1 minute or until a rough dough forms. Using the back of a spoon, press the mixture into the base of the STICKY MAPLE AND BOURBON PORK RIBS METHOD. Place the vinegar, water, bay leaves, cinnamon, sugar, rock salt and onion in a large saucepan over high heat. Stir to combine and bring to the boil. Add the ribs, reduce the heat to medium and cover with a tight-fitting lid. Simmer for 30–40 minutes or until the pork is tender. While the ribs are cooking, make the maple bourbon glaze. ALMOND AND ROSEWATER LAYER CAKE WITH HONEY ICING My almond and rosewater layer cake with honey yoghurt frosting is perfect for entertaining. Adorned with pistachios and raspberries, it's fresh, light and absolutely delicious. ORANGE AND POPPY SEED SYRUP CAKE Preheat oven to 160°C (325°F). Place the butter, grated orange rind and ¾ cup (165g) of the sugar in the bowl of an electric mixer and beat until pale and creamy. Add the eggs, one at a time, beating well after each addition. Sift the flour and baking powder over the butter mixture. Add the poppy APPLE AND BLUEBERRY CRUMBLE SLICE 2 apples, peeled and sliced 2 cups (250g) frozen blueberries 2 tablespoons pure maple syrup 1 tablespoon cornflour (cornstarch) Preheat oven to 160°C. To make the base, place the oats, coconut, almond meal, maple, oil, egg whites, vanilla and cinnamon into a bowl and mix to combine. Reserve 1½ PASSIONFRUIT TART WITH CARAMELISED RUM PINEAPPLE To make the sweet shortcrust pastry, place the flour, sugar and butter in a food processor and process until the mixture resembles fine breadcrumbs. With the motor running, add the egg yolks and water, and process until a dough just comes together. Turn out onto a lightly floured surface and gently__ __
