Ever. End of story. Period. I’ve made several macaroni and cheese recipes on the blog, including this Instant Pot mac and cheese, this one with lobster, another with
gobs of cheese and bacon,
and yet another loaded with veggies and such,
and I’ve deemed each of them a wonder in their own right. But I was missing that basic, homey, comfort food classic of a good old-fashioned baked mac and cheese. Not anymore.continue to the recipe… about The Best Homemade Mac and Cheese EASY TACO SOUP (STOVE TOP, CROCK POT OR INSTANT POT) This easy taco soup recipe can be made in 30 minutes on the stove top, Instant Pot, or slow cooked in the Crock Pot for a healthy Mexican-inspired, make-ahead, one-bowl meal. In the words of Rachel Ray, this easy taco soup eats more like a “stoup”, aka stew meets soup. It’s hearty, healthy, totally flavorful, not overly brothy, and once you’ve emptied your bowl you feel like you’ve actually eaten a meal. And all those taco toppings seal the Mexican dinner deal. We all have different cooking styles and different needs. Fast. Slow. Later. That’s why I’m giving you this recipe with 3 sets of directions. This is how you do dinner fast. Or if you prefer, do it slow. Crock Pot. Instant Pot. Just one pot. You choose. It’s perfect for fast weeknight eats, make-ahead party feasts, or double it and freeze half for later meal-planning feats. Beans, ground beef, and spicy tomatoes give this soup the same signature flavor as my mother-in-law’s homemade Taco Bell Tacos, but unlike a
lot of taco soup recipes on the web, I skip the ranch dressing packet flavoring (I prefer to top with real sour cream at the end) and the taco seasoning packet and use real food Mexican spices instead. Keeping it real my friends…just keeping it real.continue to the recipe… about Easy Taco Soup (Stove Top, Crock Pot or Instant Pot) PUMPKIN CHOCOLATE CHIP COOKIES These pumpkin chocolate chip cookies are super soft and pillowy and packed with pumpkin pie flavor! Bonus: this recipe makes a BIG batchof cookies.
My mom has a saying about cooking / eating / observing an overly ambitious amount of dinner table food. “This could feed an army!” is the exclamation I’ve heard from her more than once in my life. It’s her way of noting how lucky we are, to live and enjoy such bounty with our family and friends. It happens most every year when we cook to excess at Thanksgiving, or when I get a wild hair and decide I need to add just a bit more to the BBQ with a few more side dishes, plus another dessert, and oh heck, why not have hot dogs PLUS hamburgers. Just so nobody goes hungry. These pillowy, cakey, pumpkin chocolate chip cookies fit that bill. This recipe is perfect. Especially if you’re baking for a crowd. Like for my mom’s invisible army. Or better yet, for a party! Now, that’s an idea I can get behind. Or better yet, I’ll lead thecharge.
So hop to it soldier (I’m looking at you, Mom), and let’s get this cookie baking party started.continue to the recipe… about Pumpkin Chocolate Chip CookiesFRIDAY FAVES
Hello and happy weekend!!! I’ve struggled with creating a focused morning routine for years. But it feels like I’m constantly shuffling my morning habits to create a better work flow. One constant I don’t deviate from is I always write out the 5 top things to accomplish for the day first thing in the am, or better even, the night before. But after that, things can head to a state of flux.continue to the recipe… about Friday Faves HOW TO MAKE A CANDY CHARCUTERIE BOARD Why toss your Halloween candy in a bowl when you can create a candy charcuterie board instead! It’s the perfect display for a sweet &spooky party, too.
_This post is brought to you by Kroger_ We’ve always been big Halloween-ers. Sadly, our neighborhood is not. It may be the steep hill we live on, or that our area is more established—a nice way to say aging. Every Halloween I buy a load of candy in hopes this year will be different. But each year there seems to be fewer masked kids roaming the streets spookily singing out trickor treat.
Fewer tricks means a bounty of leftover Halloween candy. Sure, I love having a few Almond Joys, Snickers, and Reeses to snack on, but my jeans and I have found it’s best when shared :). That’s why a candy charcuterie board is the perfect excuse for a post-Halloween party, football or World Series watch party, or prep it before the big H-day for a spooky potluck with all your favorite treats, no tricks required. Here’s how to make a Halloween candy charcuterie board. continue to the recipe… about How to Make a Candy Charcuterie Board BROCCOLI CHEESE AND POTATO SOUP This creamy and cheesy potato soup with broccoli comes together quickly for an easy and quick weeknight meal that everyone will love. CHEESY POTATO SOUP WITH BROCCOLI I was a bit of an anomaly as a kid. I didn’t care for peanut butter, opting for liverwurst instead. I loved oatmeal for breakfast and salad was one of my favorite snacks. And what was my pre-dinner ritual? Two tall glasses of milk before the food ever even hit the table.Who was this kid?
I also liked broccoli. I mean I really, really, liked broccoli. When other kids wouldn’t touch their “green trees” unless they were camouflaged under a blanket of cheddar cheese (not that there’s one darn thing wrong with that!) I loved them simply steamed with a little butter, salt and pepper and drizzled with vinegar. That side put me inheaven every time.
But even while I enjoyed my broc in that cleaner way, the soup that always rang my bell was a creamy cheddar cheese broccoli fusion. I don’t know that my mom ever made it at home, but when we went out, it was my kryptonite. Like most recipes you love as a kid, the cravings for them simply don’t go away. And as things go as an adult, the extra lbs don’t always go away as easily either. But this broccoli potato cheese soup recipe doesn’t sacrifice flavor in it’s ingredient modifications, but instead is a healthyish version of my childhood fave. continue to the recipe… about Broccoli Cheese and Potato SoupFRIDAY FAVES
Hello and happy Friday! I’m finishing up this Friday Faves after eating the lovely lunch above at La Bicyclette in Carmel, CA. We’re here celebrating my husband’s birthday, and guys, this is a big one for him. One of those birthdays that crosses the line from middle age to picking out decorations from the party store’s section for “over the hill” and “vintage.” Happy birthday to my forever boyfriend. Luckily for my man, he’s as youthful as they come. He falls easily in step with hipster slang, the latest styles, and always up to speed with current music. He’s fit, has yet to turn even the slightest bit grey, and is the funniest guy I know. And he proves every day that even though he is indeed 8 years older than me, he will always and forever act younger than I ever will. And after 25+ years of marriage, I can confidently agree. It’s true. Age is relative. It truly is in how you think of yourself and how you show yourself to others.continue to the recipe… aboutFriday Faves
HOW TO MAKE HOMEMADE SLOPPY JOES Forget the cans of Manwich sloppy joe sauce, because my mom’s homemade sloppy joes recipe is just as easy to make and sixty-four (or more) times as good, especially knowing there’s a generous helping of vegetables inside this homemade, ground hamburger-ed, comfort food,beef-ey sandwich.
Remember the days when licking your plate was encouraged? They still are. And your fingers, and your chin too. I originally published this recipe in the earlier days of le FoodieCrush blog, and after making it time and time again, I felt it was time for a little refresh. It’s totally worthy. One of my favorite dinners as a kid was always Sloppy Joes, and the memories of stealing tastes of this burger/veggie mixture as it simmered on the stove still renders the same take-a-bite-then-burn-the-top-of-my-mouth-oh-no-it’s-now-become-a-blister result today as I hear the subliminal retort of my mom echo in my adult ear to “leave it alone or there’ll be nothing left for the rest of us to eat.” Guilty as charged. But, sorry mom, I still can’t help myself. And if you’re a fan of easy recipes and you make this one, my mom will tell you it’s okay that you taste-test your way through the making of it,too.
And I’m here to attest, the top-of-the-mouth-blisters are totally worth it.continue to the recipe… about How to Make Homemade SloppyJoes
EASY HAMBURGER VEGETABLE SOUP This simple hamburger soup is loaded with vegetables and is an incredibly easy weeknight comfort food dinner because more than likely you’ll have all of the ingredients on hand and ready for soup thanks to your pantry, fridge, and/or freezer. The first time I had this totally solid, totally comforting hamburger soup was when my mother-in-law made it for a family gathering of which I was not yet part of the family. My husband and I had just started dating and it was dinner at mom’s house and I was invited to go. No pressure. Nope. None at all. One of the things I learned that night—along with the fact that as a teen my husband used to wear a nylon over his head so his wet curly hair would dry straight—is that getting friends and family together to share a meal doesn’t have to be over-thought or overdone. Good food means good times, and that’s really all you need.continue to the recipe… about Easy Hamburger Vegetable SoupFRIDAY FAVES
Hello and happy Friday. Most weeknights you’ll find me at home making a dinner like the riff above on my go-to pasta.
But last week I broke with routine when I attended a press dinner at Deer Valley Resort, where the chefs were previewing the meal they will be serving at the James Beard House in New York City in a few weeks. It is quite an honor for them to be invited to the James Beard House again, and an honor for me to get to be a part of such a special night. While noshing on apps and drinks before sitting down to the 6-course dinner (see! another reason to follow my Stories on Instagram!) I I happily caught up with my friend and fellow blogger Erin . Our chat started with the standard question of most any conversation when she asked me, “How have you been?” My answer was simple. And somewhat surprising to both of us when I sort of blurted out, “I’m happy.” Whoa. Where’d that come from? “Things are actually really great, and I’m really, really happy with where I am right now. I’m just…happy.”continue to the recipe… about Friday FavesNext →
