Cook on one side for 3-4 mins until you start to see some browning and melting cheese on the bottomside.

When spat reach approximately 1-3 mm in size, they are transferred to our nursery, FLUPSY. When serving, stir the Hogwash beforehand to include all the goodies in the bowl. Serve in a ramekin or small, shallow bowl alongside freshly shucked raw oysters. Place a teaspoon near the bowl for guests to spoon the sauce onto their oysters. Use the Hogwash the same day it’s made. HOME | HOG ISLAND OYSTER CO. Heat a non-stick pan over medium-low heat. Add “just enough” butter to cover the bottom of the pan. Once the butter is fully melted and bubbling but not brown, cut your assembled Hog Island grilled cheese in half before adding to the pan. Cook on one side for 3-4 mins until you start to see some browning and melting cheese on the bottomside.
HOME | HOG ISLAND OYSTER CO. Heat oil in a large, heavy-bottomed pot over medium-high heat. Add chorizo and cook, stirring occasionally for 4-5 mins. Add water, wine, and compound butter, stir to incorporate, and let simmer for a minute or two. Add clams, cover, and reduce heat to medium-low. Add braising greens about 4 minutes in, stir to incorporate. HOME | HOG ISLAND OYSTER CO. In a medium bowl, dissolve the brown sugar into the bourbon. Combine the butter, brown sugar/bourbon mixture, and other ingredients in a medium bowl and mix well though it will remain a bit lumpy in texture. You can use a food processor if desired.
