THE BEGINNER’S GUIDE TO RAISING DUCKLINGS: EVERYTHING YOU Raising backyard ducks is a great way to supply your family with farm fresh eggs, and their quirky antics and personalities make ducks a fun addition to your backyard flock. Raising ducklings is a little different that chicks, this is everything I learned when raising myfirst duck flock.
NORTHERN NEW YORK MICHIGAN SAUCE RECIPE Like almost every other Upstate New York Regional Dish I have ever written about here on the blog, the history of the Michigan hot dog are murky. But there is a generally accepted story as to how hot dog called a “Michigan” a ended up in Nothern New York. Garth and Eula Otis, who were originally from Detroit but came to the Plattsburgh area from the midwest in the early 1920s are thought HOMEMADE PIZZA SEASONING Ingredients. 1 1/2 tbsp oregano. 1 tbsp dried basil. 1 tsp dried rosemary. 1 1/2 tbsp dried onion flakes. 1/4 tsp dried thyme. 1/2 tsp coarse sea salt. 1/2 SHOULD I GIVE MY CHICKENS GARLIC? Kills bad bacteria. Garlic is thought to be an anti -bacterial agent that can inhibit the growth of infectious bacteria and offer protection from pathogens. Helps hens’ egg production. It’s known to help produce larger, better quality eggs with a lower level of ‘bad’ cholesterol. Helps underweight or THE BEST OVEN BAKED (FOIL-WRAPPED) BABY BACK RIBS Create a pouch to cook the ribs in with heavy duty aluminum foil. Rub the ribs with a flavorful dry rub. Cook Low and Slow – 300 degrees F for about 2 ½ hours. Broil the ribs to caramelize the sauce: Heat the broiler and place an oven rack a few inches below the heating element. BLUE JAYS, THE SURPRISINGLY AGGRESSIVE CHICKEN PREDATOR Blue Jays are surprisingly aggressive and brazen bullies. I was shocked to see how the Jay was behaving in my lilac bush last fall. I think as chicken keepers we hear a lot about foxes, hawks, and weasels but we should also being aware of the threat of a Jay attack on a young flock, or keep an eye out for bullying and intimidation from a Jay to full grown chickens, that can lead to flock stress. GOOD SOURCES OF NIACIN (VITAMIN B3) FOR YOUR DUCKLINGS Ducks grow ridiculously fast. In fact, watching a duckling grow is actually kind of amazing, but all that growth requires proper nutrition. A crucial vitamin that supports the growth and health young ducklings is Niacin, and if you have plunged into the world of duck raising, you are going to want to make sure your backyard waterfowl don’t become deficient in Niacin. SHOULD I ADD APPLE CIDER VINEGAR TO MY CHICKENS WATER Apple cider vinegar can react to certain metals specifically galvanized metals and cause them to leech zinc into the water which is toxic to birds. It is best to use a plastic waterer when adding apple cider vinegar to your flocks drinking water. As chicken keepers, we want to do our best to make sure our flock is healthy and happy. Mixing the solution in this order will prevent the bleach from splashing up on you. The lilac festival is this weekend in Rochester at Highland Park!This is an incredibly busy time of the year for us, between the planting of field crops and calves being born, it is almost impossible to sneak off the farm. Bring to a simmer on the stove over medium-low heat, whisking constantly until it begins to steam slightly. Remove from heat and stir in vanilla extract. Refrigerate. Enjoy! CENTRAL NEW YORK UTICA GREENS Blanche the escarole. Saute the garlic and onion over medium heat in an ovenproof skillet. Add the blanched greens, chicken stock, chopped peppers, prosciutto, breadcrumbs, and cheese to the garlic and onion. Top with additional cheese and bread crumbs. Place casserole under the broiler for 4 to 6 minutes until brown. DRYING FRESH PARSLEY IN A DEHYDRATOR Set the dehydrator temp low, 95-degrees is ideal for herbs. Drying herbs in high heat will cause them to take on an ugly black appearance. Plan drying time variations, herbs can take anywhere from 12-24 hours to dry. The huge time variation is caused by moisture in THE PERFECT PORTERHOUSE STEAK AND GARLIC BUTTER SAUCE Preheat oven to 425F. Place a Cast Iron Square Grill Pan in the oven. Using paper towels, pat both sides of the steak dry. Season with salt and pepper, to taste. Remove skillet from the oven and place on a stove burner set at medium-high heat. Place the steak in the middle of the skillet and cook until a dark crust has formed, about 4 minutes. SMALL BATCH RASPBERRY JAM MADE IN A BREAD MACHINE Instructions. Gently mash the raspberries with a potato masher or fork. Add the mashed raspberries to the bread maker with sugar, lemon juice and pectin. Select the jam setting on the bread machine, (the typical jam setting on a bread machine runs for about 1 hour and 20 minutes) Once the cycle has ended, use baking mitts to carefully liftthe
