Start to finish, you’re done in less than 25 minutes. 1 C. red bell pepper, chopped 1 C. onion, chopped 1 C. carrot, chopped 1 tsp. extra virgin olive oil 3 cloves garlic, minced 1/2 tsp. cumin 1/4 tsp. turmeric 1/4 tsp. coriander 1 15-oz. 21 DAY FIX ADJUSTMENTS AND MODIFICATIONS Adjust accordingly. VEGGIE LO MEIN IN THE INSTANT POT Vegetable Lo Mein 1 garlic clove, minced 1Tbsp. sesame oil 8 oz Soba Noodles 1 C snow peas, trimmed 1 C broccoli florets 2 carrots peeled and sliced into matchstick-sized pieces 1 1/2 C vegetable broth 1 tsp. grated ginger 2 Tbsp. low sodium soy sauce 1Tbsp. oyster sauce 1 Tbsp. rice wine 1Tbsp. light VEGAN MOROCCAN COUSCOUS The flavors of Morocco come through with this easy dish. Start to finish, you’re done in less than 25 minutes. 1 C. red bell pepper, chopped 1 C. onion, chopped 1 C. carrot, chopped 1 tsp. extra virgin olive oil 3 cloves garlic, minced 1/2 tsp. cumin 1/4 tsp. turmeric 1/4 tsp. coriander 1 15-oz. BROCCOLI FARRO SALAD Never heard of Farro? It’s a type of hulled wheat, and its chewy texture gives salads and soups a fiber boost. This broccoli farro salad is really easy to make. I recommend making it at night, then refrigerating it to eat the next day. It really lets the flavors meld together. 1 C farro COUSCOUS SUN-DRIED TOMATO SALAD WITH CHICKPEAS AND FETA This was one of my FAVORITE new salad discoveries of the summer. SOOO delicious! The chickpeas amp up the protein level of this salad, but you could easily add diced chicken breast as well. You’ll Need: 1 C. couscous, dried, not cooked 1 C. chicken stock 7 oz. jar sun-dried tomatoes, diced (reserve oil for CAULIFLOWER “POTATO” SALAD Make a simple swap by replacing potatoes with cauliflower in your favorite potato salad recipe! I’m including the instructions for how I made it, but my guess is you could substitute Greek yogurt for the mayo to make it cleaner/healthier if desired.
