SLOW-BAKED TROUT WITH SOY SAUCE MARINADE Marinate the trout on top and bottom. Place it on a baking sheet with baking paper. Bake the trout in a preheated oven at 100°C/210°F for 30 minutes. Halfway through, open the oven and drizzle the sauce on the baking sheet onto the trout. Remove the trout from the oven and serve immediately with finely chopped chives and toasted sesame seeds. HOW TO MAKE WHIPPED GANACHE Instructions. Place the cream and sugar (if using) in a small pot. Heat up the cream over medium heat until it steams. Stir constantly to dissolve the sugar. If by mistake it breaks into a bowl, then you need to cool it down a bit before using it. Melt the chocolate in a bowl. EASY PASSION FRUIT MOUSSE Add half the whipped cream to the cream cheese and passion fruit mix and incorporate them using folding motions. Repeat with the other half of the cream. To assemble the mousse, you can layer the flavours in individual containers or in a small trifle dish. If you want to use a large trifle dish, it's best to double the recipe. TURKEY SOUP WITH PASTA AND SWISS CHARD Don't worry if it needs a bit more cooking, it will return to the soup. Add the pasta and let it cook until al dente. Return the turkey to the pot and correct the level of salt and pepper. Add the cream and bring everything to a stronger boil. Add the swiss chard, stir for 20 seconds and stir immediately.PERUVIAN SALAD

There was always some Peruvian Pesto (aka salsa verde) frozen in a container waiting for a fresh batch of pasta. They've been my obsession for many years and along the way it became the obsession of several friends aswell.

GOLDEN RAISIN AND WALNUT SOURDOUGH BREAD 10:30AM – STEP 1: LEVAIN. In the morning when you go to feed your sourdough starter as usual take out the amount that we need for the levain first. The levain is the yeast mix that we’re going to use to make the bread. Use 50g of your active sourdough starter, 100g flour (it can be all purpose) and 100ml water that’s lukewarm. PANKO AND PEANUT CRUSTED SHRIMP Start with the dip so it has time to cool down. Peel the pepper and cut in small cubes. Put everything in a pot and boil on high heat until it has reduces to 1/4 its original volume or has the texture of a liquid honey. Let cool down to room temperature. Blend until the dipis nice and even.

Finely grate or mince the garlic and cook until the smell turns mild. Add the white wine and let it evaporate completely. CHOCOLATE-FILLED CHOUX AU CRAQUELIN Melt the chocolate in the microwave in 30 second intervals. Mix in between until completely melted. In a small pot add in the milk, sugar and salt and place over medium heat. Place the egg yolk in a bowl and add the flour and cornflour. Mix in immediately with a whisk until youget a paste.

There was always some Peruvian Pesto (aka salsa verde) frozen in a container waiting for a fresh batch of pasta. They've been my obsession for many years and along the way it became the obsession of several friends aswell.

ROASTED BANGERS AND MASH For the roasted bangers and mash. Drizzle olive oil in a pan over medium-low heat. Add the onions and rosemary leaves and sauté them with patience. Let the onions go soft and sweet and then caramelize. Ideally, use a pan that you can pop in the oven afterwards. Add GNOCCHI WITH LEEK SAUCE For the leek sauce. Melt the butter and add the leeks (remove the green part, cut in half, wash throughly and slice) and the leaves from the fresh oregano. Cook until soft. Finely grate or mince the garlic and cook until the smell turns mild. Add the white wine and let it evaporate completely.
