RECIPES - JUST A LITTLE BIT OF BACON Welcome to my kitchen! I’m a Italian-American girl who loves fresh foods, local ingredients, and all sorts of comfort foods. Here you will find Mediterranean RICH & COMPLEX TRADITIONAL BOLOGNESE SAUCE Instructions. Heat the butter in a large pot over medium-low heat. Add the salt, onion, and carrots. Saute for 5 minutes, or until just starting to get soft and golden. Add the garlic; saute for 30 seconds. Add the meat and oregano. ITALIAN SAUSAGE AND ZUCCHINI CASSEROLE Transfer the zucchini to the baking dish. Add the sauce to the hot skillet and bring to a simmer. Pour sauce into the baking dish. Add the sliced sausage, oregano, and thyme. Mix well to combine. Cover and bake the casserole for 25 minutes. Sprinkle the parmesan over the top and stir in. Bake for 5 minutes more. TENDER AND JUICY GRILLED BREADED CHICKEN BREAST Once all the chicken has been breaded, make the tomato salad. Put the tomatoes and scallions in a medium bowl. Whisk together the garlic, salt, olive oil, and red wine vinegar. Toss the tomatoes with the dressing. Grill the chicken on high (gas grill) with the lid open, 2 minutes on each side. HONEY BALSAMIC VINAIGRETTE SALAD DRESSING To make honey balsamic vinaigrette, add olive oil, balsamic vinegar, honey, mustard, shallots, and garlic to a mason jar. Season with salt and pepper. Then shake the dressing until it is thick and well mixed. Chop up the shallots and garlic. Measure all ingredients into a masonjar.

RICH & COMPLEX TRADITIONAL BOLOGNESE SAUCE Instructions. Heat the butter in a large pot over medium-low heat. Add the salt, onion, and carrots. Saute for 5 minutes, or until just starting to get soft and golden. Add the garlic; saute for 30 seconds. Add the meat and oregano. TENDER AND JUICY GRILLED BREADED CHICKEN BREAST Once all the chicken has been breaded, make the tomato salad. Put the tomatoes and scallions in a medium bowl. Whisk together the garlic, salt, olive oil, and red wine vinegar. Toss the tomatoes with the dressing. Grill the chicken on high (gas grill) with the lid open, 2 minutes on each side. GREEK SPICY FETA DIP (TIROKAFTERI) Add all ingredients to the bowl of a food processor. Sprinkle in a few drops of the jalapeno pickling juice. Blend until dip is smooth. Taste and add more pepper or pickling juice as needed. Serve with crudites or pita bread. If you wish, top the dip with some crumbled feta, oliveoil,
ROAST PORK SHOULDER PORCHETTA STYLE One hour before roasting, take the pork out of the refrigerator and let it warm to room temperature. Preheat the oven to 300F. Put the roast in the oven and roast for 3 hours at 300F. Then increase the temperature to 450F and continue roasting for 30 minutes, or until the outside of the roast is browned and crispy. SLOW COOKER CHICKEN AND ONIONS Add onions and salt to the skillet and cook on medium-low, stirring until softened but not browned, about 10 minutes. Pour onions into slow cooker. Stir in tomato paste, bay leaf, thyme, and sage. Place chicken on top and pour wine over. Close cover and cook for 8-9 hours on low, or 3-4 hours on high. Mix the cheese with the tablespoon offlour

PAN SEARED STEAK WITH HORSERADISH SAUCE Horseradish Sauce. Make the horseradish sauce while the steak is being brined. Mix together the sour cream, scallions, horseradish, and salt in a bowl. Use the smaller amounts of scallions and horseradish to start. Taste and add more as needed. Serve the steak with thehorseradish sauce.

A favorite of both my mom and my mother-in-law and one we’ve been having fun testing here! 🙂 PORK SALTIMBOCCA ALLA ROMANA Heat the oil in a large skillet over medium high heat. Then dredge the pork and prosciutto in flour until evenly coated. Once the oil is hot, place the pork prosciutto side down in the skillet. Sear the pieces until golden brown on both sides and cooked through, about 2-3 minutes per side. Transfer the pork to a plate and cover lightly with foil. LIDIA'S ITALIAN PIGNOLI COOKIES Form the dough into balls, roll in pine nuts, and bake the cookies until lightly browned. Break up the almond paste in a food processor. Add the sugar and pulse to combine. Add the egg whites and orange zest. Process to make a smooth dough. Roll the dough into balls and press into the pine nuts. ITALIAN BRAISED PORK SHOULDER RAGU In a large pot, heat the olive oil on medium-high heat. Season the pork shoulder with salt and pepper. Once the oil is shimmering, add the pork and sear it all all sides until browned, about 3 minutes per side. Transfer the pork to a bowl and set aside. Reduce the heat tolow.
LEFTOVER LAMB GYROS WITH TZATZIKI SAUCE For the gyros: Pull out two skillets, one large for the lamb and one medium to warm the pitas. Add the lamb to the large skillet and saute the lamb over medium heat until warmed through, 5 minutes. While the lamb is warming, heat the medium skillet over medium heat. Add a little olive oil to the skillet (enough to coat the bottom). PEACH AND BOURBON FROZEN COCKTAIL WITH A HINT OF GINGER Reduce heat to medium and cook down until most of the water has evaporated and the peach very soft, about 10 minutes. Cool cooked peach in refrigerator. (Or freezer for about 20 minutes if your other peaches are already frozen.) Take all ingredients and put in blender.Blend until smooth.
