Method. Bring a pan of salted water to the boil. Separate the leaves from the cauliflower and set them aside, and pick off a few nice-looking florets. Boil the rest of the cauliflower in the pan of salted water for about 10 minutes, until it is soft enough to mash. While the cauliflower is cooking, pan-fry the florets in a glug ofolive oil

Just before the garlic starts to brown, add the red pepper, arborio rice and turmeric, and season with salt and pepper. Stir for 1 minute to coat the rice in the oil and turmeric, then add ROASTED VEGETABLE AND CHICKPEA CURRY Heat your oven to 220°C/425°F/gas mark 7. Toss the diced red peppers in a little oil and roast for 15-20 minutes. Once roasted put to one side. Once the base of the curry is at the volcano stage described above, add 650 ml of water, the tomato puree, sugar, cauliflower and soaked red lentils, and simmer for around 15 minutes, until the*
