Baked Panko-Crusted Tofu with Spicy Scallion and Garlic Sauce over Brown Rice and Broccoli is a great copycat takeout style meal that's a bit healthier and still DELISH! Tip: if you’re short on time and don’t want to bread and bake the tofu, simply stir-fry it and glaze it with the sauce. Great option for #MeatlessMonday and beyond. Link in bio. 1 block extra-firm tofu, lightly pressed 1/2 cup panko bread crumbs 2 tbsp flour of choice1 tbsp cornstarch
1/4 to 1/3 cup of unsweetened plant milk 1/4 tsp of garlic, onion, paprika, and ground chili each A few pinches of saltOptional:
Avocado or coconut oil (spray) Preheat oven to 425 F/ 220 C. Cut tofu in half horizontally and ‘dab away’ any excess moisture with a clean kitchen or paper towel. For a “meatier” texture, freeze the tofu overnight, then carefully press it once thawed beforeusing.
Sprinkle it with salt from all sides. Prepare the batter by whisking together flour, cornstarch, spices, and plant milk in a shallow bowl until smooth. Add bread crumbs to a second shallow bowl. Generously cover both tofu pieces with the batter, then press them into the bread crumbs. Make sure all sides are evenly coated. Bake tofu on a lined baking sheet for 20 minutes, flip it over, and bake for another 10-20 minutes until lightly browned and crispy. Optional: Spray the breaded tofu with a bit of oil before baking or drizzle some oil on the baking sheet. Cut tofu into slices, top with the sauce (see link in bio for recipe), and serve over some rice and broccoli. Enjoy!.

Olive oil, for sautéing 1 can chickpeas (15 ounces), drained, and rinsed 3 large cloves garlic, sliced2 cups chopped kale
1 packet vegan tortellini (9 ounces), frozen For the Curry Dressing: cup unsweetened non-dairy yogurt cup vegan mayonnaise 3 tablespoons fresh lemon juice2 tablespoons water
1 teaspoon curry powder Maple syrup to taste Salt and freshly ground black pepper to taste Optional: Rub the chickpeas between a kitchen towel to remove theskins.
Add a drizzle of olive oil to a large skillet over medium-high heat. Once the oil is hot, add the chickpeas. Sauté the chickpeas for about 7 minutes, or until golden brown and crispy. Transfer to arimmed plate.
Meanwhile, add the yogurt, mayonnaise, lemon juice, water, and curry powder to a medium bowl. Whisk to combine. Add maple syrup to taste. Season with salt and black pepper. Set aside. Add a drizzle of olive oil to the same skillet over medium heat. Add the garlic and cook for about 2 minutes, or until lightly golden. Stir continuously to prevent the garlic from burning. Add the kale and toss with the garlic and olive oil. Add 2 tablespoons water and cover. Let the kale steam for 2 minutes. Remove the lid and sauté for one more minute. Transfer the kale and garlic to the plate with the chickpeas. Add a drizzle of olive oil to the same skillet over medium-high heat. Add the tortellini flat side down and let them cook undisturbed for 2 minutes. Add ½ cup water, cover, and steam for 5 minutes. Remove the lid and stir in the chickpeas, kale, and garlic. Season with salt and black pepper. Add the desired amount of dressingfor serving.
