Four cups of ripe, sweet watermelon, cubed – so you can you measure it. Or about 40 ounces if you have a food scale and don’t want to cube it. Zest and juice from 2 limes. DELICIOUS PLANT BASED RECIPES FOR ENTERTAINING We all know that if we don't learn how to make the food easy and delicious we won't stay with this whole food plant based no oil lifestyle for the long haul. With that in mind we decided to do some hands on cooking with the 14 people who participated in LENTIL LOAF WITH DATE GLAZE Instructions. Place pitted dates in a bowl and cover with boiling water. Let soak for 30-60 minutes. Drain and reserve soaking liquid. Place pitted soaked dates and 1/2 cup of the soaking liquid in a food processor bowl or a high powered blender and process APPLE OAT CRISP VEGAN/GF Instructions. Preheat oven to 350 degrees. For the filling in a large mixing bowl combine the apples, lemon juice, cinnamon, nutmeg, oat flour, vanilla powder, raisins and apple juice stir until well combined. No need for oil either - this tomato based sauce is still going to be full flavored and make your taste buds dance! It goes together quickly and needs just a small amount of simmer time. Oat & Jam Bars – Jammie’s! Made using my Quinoa Banana Oat Muffin recipe. Preheat oven to 350 degrees. In a large bowl mash the bananas using a potato masher or a large fork. Mix in the applesauce. Add the cinnamon, baking powder, cardamom, nutmeg and vanilla powder or vanilla extract. Stir until well incorporated. SOUPER CUBES REVIEW & HOW TO USE The only way to freeze food in perfect portions is by using Souper Cubes. I use Souper Cubes to freeze everything we batch prep for the freezer. As you know I love to batch cook not only for the week ahead but for meals down the road as well. That is WHOLE FOOD PLANT BASED BRUNCH SOS FREE Instructions. Put spices, nutritional yeast and ground flax in boiling water in a medium size sauce pan on the stove, stir, add oats and stir while cooking until it starts to come together and looks like a “hot mess.”. TAMI’S EASY RED SALSA Quick & easy and yet so delicious. Tami’s Easy Red Salsa Quick & Easy but oh so tasty. 1 – 14 ounce can diced tomatoes no salt added (reserve the juice)1/2 medium onion1 Jalapeno pepper seeded2-3 garlic cloves1 lime (juiced)1/2 cup cilantrofreshly ground black pepper totaste

Put spices, nutritional yeast and ground flax in boiling water in a medium size sauce pan on the stove, stir, add oats and stir while cooking until it starts to come together and looks like a “hot mess.”. This takes a couple of minutes because the oats need to cook. Once it comes together you can form the mixture into 12 patties. CHERRY PEACH COBBLER Drizzle a teaspoon of balsamic vinegar over each dish of fruit, set aside while making the topping. In a medium size bowl mash the banana with a fork, stir in the unsweetened applesauce or date paste if you want it to be sweeter. We set the air fryer to 400 degrees and put the tray in the air fryer without preheating it and in 19-20 minutes the fries are ready to eat. Easy. I like easy. You can make a large batch of fries in the Breville SmartOven Air.

WATERMELON LIME POPSICLES Watermelon season is upon us and that makes me incredibly happy. We are already on our third melon for the season. We will enjoy watermelon all summer long. The grandchildren recently helped me make watermelon popsicles that are so refreshing. You don’t have to be a kid to enjoy these but they might make you feel like a kid again! These only have two ingredients – watermelon and fresh limes. They are so tasty – refreshing and pure joy to eat. You will need some popsicle molds and this recipe makes 10, 3 ounce popsicles. I didn’t get any photos of the pouring of the mixture into the tray – I was too busy with 3 little ones under the age of 5 “helping” me with that process! If you have leftover watermelon lime juice mixture pour it over some ice and enjoy it as a refreshing beverage. Add a little mint for a slightly different flavor. We thought they were beautiful as well as delicious. I love the galvanized tray and utensil holder. They are perfect for outside dining and serving. I will link to some below.
