Method. Sift the dry ingredients together twice with ½ t (2,5 ml) Chilli & Garlic Seasoning. Cut in the butter with a pastry cutter, or sharp knife. Add the cheese. Whisk the egg yolk and cold water together. Add and mix to a firm but pliable dough. Knead dough lightly, flatten into a TRADITIONAL SMOORSNOEK Sauté the sliced onion, pre-seasoned with Green Onion Seasoning, in the oil and butter mixture.Add the diced potatoes and stir-fry until golden. Add tomatoes, sugar and Chilli & Garlic Seasoning.Simmer gently until the potatoes are cooked.OVEN-BAKED SNOEK
Adjust the oven shelf to one below the middle position. Preheat the oven to 200°C. Season the meaty side of the fish lightly with Fish Spice.Grate the onion and tomato into a mixing bowl.FARMER'S OMELETTE
Sauté the bacon in the oil until crisp. Remove with a slotted spoon, keep the fat in the pan. Add the sliced leeks and grated potato to thepan.
SAVOURY SNOEK TART
Preheat to 180°C. Soak the snoek in the hot milk skin side up while measuring the remaining ingredients. Toss the breadcrumbs with the melted butter and sprinkle over the base of a 25 – 30 cm pie plate or porcelain flan dish. Or use 5 smaller individual dishes. Sauté the onions in the butter with Chilli & Garlic Seasoning until golden andsoft.

Method. Place the dried fruit in a small pot, add boiling water and tea bag. Leave to draw and soak for 15 – 20 minutes. Remove the tea bag. Add the sugar, cinnamon stick, Seasoned Sea Salt and naartjie peel. Simmer until the fruit is soft, about 15 minutes. Serve warm asa side dish.
LEG OF SPRINGBOK WITH DRIED FRUIT One of my favourite South African venison recipes. Start off by rubbing the leg with Meat Spice and olive oil, then stuff it with herb butter. Soak the fruit separately in the sweet wine or port. The next day, place the meat on a bed of chopped onion and lamb shank pieces in a cast iron pot, strain the wine from the fruit into the pot and add the stock. Slow roast for 4 hours, adding fruitINA PAARMAN
125 g real butter, softened 1 x 250 g Ina Paarman’s Icing Mix 4 T (60 ml) water 1 t (5 ml) lemon juice . Use an electric beater or wooden spoon to mix butter until creamy. PICKLED FISH WITH LOTS OF ONIONS In a medium saucepan, cook the onion rings, water, cider vinegar, turmeric, sugar and Seasoned Sea Salt for 5 – 7 minutes. To cook the onions, but keep them crisp, spoon the onions out, but don’t discard the liquid. Add the Tikka Curry Coat & Cook Sauce to the liquid and bring to the boil. Taste for seasoning.FARMER'S OMELETTE

Method. Heat the oil in a large heavy based saucepan. Add the onion and 1 t of the Seasoning to the oil. Sauté until the onions are lightly browned. Add potatoes, carrots and split peas. Stir-fry for about 3 minutes to develop the flavours. Add the hot water and Liquidor Powdered Stock.

CHEESY SWEET POTATO BAKE This recipe is a winner! One of my son, Graham's favourites! You can certainly use regular potatoes for this dish - but sweet potatoes are so trendy at the moment and are an excellent source of Vitamin AINA PAARMAN

To cook the onions, but keep them crisp, spoon the onions out, but don’t discard the liquid. Add the Tikka Curry Coat & Cook Sauce to the liquid and bring to the boil. Taste for seasoning.INA PAARMAN
125 g real butter, softened 1 x 250 g Ina Paarman’s Icing Mix 4 T (60 ml) water 1 t (5 ml) lemon juice . Use an electric beater or wooden spoon to mix butter until creamy. BEST CHICKEN LASAGNE Adjust oven rack to the middle position. Preheat oven to 180°C. In a large bowl, toss the cubed chicken with the Chicken Stock (dissolved in 1 cup of water), Lemon & Black Pepper Seasoning and parsley. Mix well. Set aside. Soak the lasagne sheets for 10 – 15 minutes in hottap water.
TRADITIONAL SMOORSNOEK Sauté the sliced onion, pre-seasoned with Green Onion Seasoning, in the oil and butter mixture.Add the diced potatoes and stir-fry until golden. Add tomatoes, sugar and Chilli & Garlic Seasoning.Simmer gently until the potatoes are cooked.CHICKEN À LA KING
Lightly season chicken with Chicken Spice.Heat butter and oil in a frying pan and add chicken, cooking on both sides until just lightly browned. Add sliced mushrooms and stir-fry with chicken for 1 minute, just to develop the flavour.OVEN-BAKED SNOEK
Adjust the oven shelf to one below the middle position. Preheat the oven to 200°C. Season the meaty side of the fish lightly with Fish Spice.Grate the onion and tomato into a mixing bowl.INA PAARMAN

Preheat to 180°C. Soak the snoek in the hot milk skin side up while measuring the remaining ingredients. Toss the breadcrumbs with the melted butter and sprinkle over the base of a 25 – 30 cm pie plate or porcelain flan dish. Or use 5 smaller individual dishes. Sauté the onions in the butter with Chilli & Garlic Seasoning until golden andsoft.

Method. Sift the dry ingredients together twice with ½ t (2,5 ml) Chilli & Garlic Seasoning. Cut in the butter with a pastry cutter, or sharp knife. Add the cheese. Whisk the egg yolk and cold water together. Add and mix to a firm but pliable dough. Knead dough lightly, flatten into aINA PAARMAN

CHEESY SWEET POTATO BAKE This recipe is a winner! One of my son, Graham's favourites!
