TURKEY MEATBALLS WITH MOROCCAN COUSCOUS For the Couscous Salad. Place the diced courgette, aubergine, red onion and chickpeas into a large bowl. Add the oil and pepper then mix together well ensuring the vegetables are well coated with the oil. Next transfer the veggies onto a baking tray and spread out. Place the tray in the centre of the oven and bake for 20-25 minutes. EASY CHILLI CON CARNE RECIPE (WITH CANNELLINI BEANS) Stir well then bring to a simmer. Add the chopped red bell pepper, 1 tbsp cocoa powder, 2 tbsp Worcestershire sauce and 1 tin of cannellini beans. Mix together well and then cover with a lid or tin foil. TRADITIONAL TIRAMISU RECIPE WITH MASCARPONE & TIA MARIA Reattach the whisk attachment (or use a clean mixing bowl and electric whisk). Add the egg whites to the mixer and whisk until stiff white peaks form. Next add the whisked egg whites to the mascarpone mixture one third at a time. Next add the chopped celery, 1 tsp oregano and black pepper. Stir well before pouring in 750ml of vegetable stock. Bring to the boil and then simmer gently for 20 minutes. Chop FIG AND APPLE CHUTNEY WITH BALSAMIC VINEGAR In a large pan heat the oil. Add the onions and gently cook until soft and slightly caramelised. Next add the chopped apples and figs. Sprinkle over the sugar and stir together well to dissolve the sugar. Then add 2 tsp mixed spice, ½ tsp nutmeg, ½ tsp cinnamon, 150ml red wine vinegar and 250ml balsamic vinegar. KEDGEREE WITH POACHED OR BOILED EGGS While the rice is cooking, boil a small pan of water then bring to a simmer and poach the 2 eggs by cracking directly into the water. Poach for around 3-4 minutes then plunge into a bowl of cold water to stop the cooking process. When ready to serve place the eggs back into boiling water for 30 seconds in order to reheat. HONEY GLAZED PRAWNS STARTER WITH GRIDDLED GREENS Cooking the prawns. Transfer the chilled, griddled veggies to a baking tray and place in a hot oven for 5 - 10 minutes or until they start to sizzle. Meanwhile, put the griddle pan back on the heat. Once the pan is hot place in the skewered prawns and pour over the honey garlicdressing.
