RECIPES — THE BOY WHO BAKES Remove from the heat, add the milk, and set aside for the moment. In a medium bowl mix together the flour, sugar, bicarbonate of soda, salt and spices. Add the egg yolk the dry goods, pour in the butter mixture and use a wooden spoon to mix and form a dough. Refrigerate for a minimum of 30 minutes before using. SOURDOUGH CHOCOLATE CHIP COOKIE When ready to make the cookies place the butter and sugars into a large bowl and using an electric mixer, fitted with the whisk attachment, whisk for a couple minutes to combine and to break up any lumps. Add the egg yolks and whisk for 2-3 minutes on medium/high. SPELT CAKE — RECIPES — THE BOY WHO BAKES Over on my Patreon page there is a bumper new recipe, a good bye to blood oranges now the season is ending. The recipe is a blood orange pound cake, split and filled with blood orange custard and then to gild the lily the whole thing is glazed with white chocolate andhazelnut.
JAPANESE FLUFFY SOUFFLE PANCAKES Pipe tall mounds of batter, about 7-8cm in diameter. Spoon 2 tsp water into the frying pan and place a lid on the pan for 2-3 minutes, until the water has cooked off and the pancakes are golden on the base. This steams and sets the top of the pancakes whilst the bottom browns. Remove the lid and flip the pancakes, adding another 2 tsp water and STEP BY STEP SOURDOUGH RECIPE Sprinkle the salt over the dough and use that last 25ml water to pour on top of the dough to help the salt dissolve. Repeat the dimpling and folding process until the salt is distributed. To make the dough pour the water into a large bowl and scrape in the mature starter/levain and mix with your fingers briefly to break up a little. Add in the flour, salt and olive oil and RASPBERRY CHEESECAKE STREUSEL BARS Raspberry Cheesecake Streusel Squares From One Tin Bakes by Edd Kimber (published 2020 by Kyle Books) Makes 16-24. Lemon-infused cheesecake bars topped with jammy raspberries would be wonderful just on their own, but I wanted to make something a little more impressive, so these are topped with oat streusel, adding great texture. BROWNIE CRINKLE COOKIES Allow to melt, stirring occasionally until fully melted. Remove the bowl from the heat and set aside for the moment. In the bowl of a stand mixer fitted with the whisk attachment, or using an electric hand mixer, whisk together the eggs and sugars, on medium-high speed, for exactly 5 minutes. BEST EVER RYE CHOCOLATE BROWNIES Live. •. Preheat the oven to 180C (160C fan). Lightly grease, and line with parchment, a 9x13 inch brownie pan. Into a large bowl sieve together the flour, cocoa, salt and baking powder. After the time is up reduce the temperature to 220ºC and bake for a further 20-25 minutes or until the bread is well browned. Remove from the oven and allow to cool for at least an hour before slicing. Example Baking Schedule. 5pm - Mix the flour and water. NO-KNEAD ZA'ATAR FOCACCIA To make the dough add the flour, yeast, salt and sugar to a large bowl. Pour in the water and use your hands or a wooden spoon to mix together until everything is hydrated, just making sure there are no packets of flour. Add 2 tbsp of the olive oil and mix briefly to combine, drizzle over the last of SOURDOUGH DETROIT STYLE PIZZA Whilst the dough is proving make the sauce. Pour the oil into a saucepan and heat over low/medium heat. Add the crushed garlic and cook for 30 seconds or until fragrant and the garlic is just taking on the barest of colour. Add the chilli flakes and oregano and stir tocombine.
NEW YORK STYLE BAGELS To Boil. 30g barley malt syrup. 1 tbsp baking soda. To make the bagel dough place the flour, yeast and salt into the bowl of an electric stand mixer and with the dough hook attached, mix briefly to combine. Add the barley malt sryup to a jug with the cold water and mix together until dissolved. BLACK COCOA PEANUT SANDWICH COOKIES These cookies are so ridiculously simple and so delicious. The cookie element is based around my melting moment recipe, a melt in the mouth, incredibly tender cookie. I use black cocoa but you can also use a regular dutched cocoa powder if thats what you have on THE ULTIMATE CHOCOLATE CHIP COOKIE Preheat the oven to 180ºC (160ºC fan oven) and line two baking trays with baking parchment. Use your hand or a mechanical ice cream scoop to form balls of dough, about 60/70g per cookie. Topping. 600ml Double cream. lots and lots of berries. To make the pavlova preheat the oven to 130c and line a baking tray with parchment paper, drawing an 8-inch circle on the back as a template.
