INDIAN SIMMER
Indian food recipes with beautiful photography and storytelling. Recipes are organized by meal courses and ingredients. GOAT CURRY RECIPE WITH 5 WHOLE SPICES: HOW TO COOK IT AT HOME This Goat Curry recipe is a speciality of my dad. It’s a simple recipe where the goat is slow cooked with just a few ingredients. The smell of whole spices blends beautifully with sliced onions which melt on being cooked slowly over low heat. INDIAN CURRY PASTE RECIPE: HOW TO MAKE CURRY PASTE AT HOME Heat oil in a thick bottom pan, add whole spices. Once they sputter add the wet paste. Cook it on medium-high heat until all the water has evaporated. Once the paste starts getting thicker reduce the heat to medium-low, add salt and turmeric. Cook until theEGG CURRY RECIPE
Put the oil in a medium-sized, non stick frying pan and set over medium heat. When oil is hot, put in the cumin seeds. Ten seconds later, put in the onion and ginger. Put in the spice paste. Stir and cook for 15 seconds. Now put in the tomatoes and sugar. Bring to HOW TO MAKE FRUIT LEATHER Place it in a big pot and add water. To every 4 cups of fruit add 1/2 a cup of water or if the fruit is really juicy you can even try adding a little less or no water. Bring it to a boil. Reduce heat to low and add sugar and lemon juice. To every 4 cups of fruit add 1- BAIGAN BHARTA RECIPE Saute for 2-3 minutes until they begin to get translucent. Add turmeric, coriander, garam masala. Quick stir. Add tomato. Cook on medium heat for 5-8 minutes until the tomatoes melt and form a loose paste. Turn heat to medium low. Add green peas. ICED MASALA CHAI RECIPE Add the spices, sugar and tea bags. Turn the heat off. Let it steep for 15 minutes. Longer if you prefer a stronger taste of spices. Strain hot tea through a strainer. Let it cool a little and then transfer to a flask or pitcher. Place in the refrigerator until chilled. To serve, fill a glass with ice. Pour the tea. MASALA EGG ROLLS WITH ROTIMATIC Before the egg sets, place a roti on top and press down gently. Once the egg is cooked flip the roti. Remove from the pan and place the egg side up. Repeat the same process for the rest of the eggs and roti. Spread chili sauce, on the egg side of the roti. Arrange sliced onion, tomato and cilantro in a GREENGAGE JELLY AND GREENGAGE JAM RECIPE- INDIAN SIMMER Transfer the juice into a pot again. Save the pulp for the jam. Save 1/2 cup of sugar and add the rest to the the fruit juice. Mix well and turn on the heat. Then add rest of the sugar mixed in pectin. Stir everything well together and bring the mixture to a rolling boil for 1 minute. Skim the foam formed on top. BREAD KATORI CHAT- INDIAN SIMMER Indian street food needs no introduction. Its a meal bursting with different flavors that entices you again and again. Be it puchkas, papri chaat, vada pau or aloo tikki chaat, each with its unique flavor makes you crave for it everytime you want to indulge in yummy, inexpensive and a quick meal that is loved by people all over theworld.

Pre heat the oven upto 400° F. Place the marinated chicken on a baking sheet, spray a little bit of cooking spray and cook for 20-25 minutes or until clear juice runs out. When the chicken is cooked well, take it out from the oven and cover with aluminum wrap for it to rest for about 5 mins. This makes the chicken juicier. GARLIC CHICKEN RECIPE Salt. Make a paste of ginger, chili and about 10-12 cloves of garlic. Mix it with yogurt and lemon juice. Add as pinch of salt and marinate the chicken with it. Let the chicken marinate for a couple hours. After the chicken is marinated use a thick bottom skillet or pan forcooking. Smash 5

Cook until the MASALA EGG ROLLS WITH ROTIMATIC Before the egg sets, place a roti on top and press down gently. Once the egg is cooked flip the roti. Remove from the pan and place the egg side up. Repeat the same process for the rest of the eggs and roti. Spread chili sauce, on the egg side of the roti. Arrange sliced onion, tomato and cilantro in a BAIGAN BHARTA RECIPE Saute for 2-3 minutes until they begin to get translucent. Add turmeric, coriander, garam masala. Quick stir. Add tomato. Cook on medium heat for 5-8 minutes until the tomatoes melt and form a loose paste. Turn heat to medium low. Add green peas. HOW TO MAKE FRUIT LEATHER Place it in a big pot and add water. To every 4 cups of fruit add 1/2 a cup of water or if the fruit is really juicy you can even try adding a little less or no water. Bring it to a boil. Reduce heat to low and add sugar and lemon juice.
