BEST WINE TO PAIR WITH BARBECUE CHICKEN IntoWine asked a panel of wine experts to suggest a great wine to pair with barbecue chicken: Barbecue chicken can be prepared in a variety of ways, of course. If a sweet barbecue sauce is used, Zin is a reliable pairing. The ripe fruitiness of the Zin is echoed by the sweet fruitiness of the sauce. A good choice for Zin to pair with this style of barbecued chicken would be one of the BEST WINE TO PAIR WITH PORK TENDERLOIN IntoWine asked a panel of wine experts to recommend the best wine to pair with pork tenderloin: I like to go one of two different ways with pork tenderloin. This tends to be the most delicate, least “porky” portion of the pig, so I want a wine that’s not going to drown out the more subtle flavors of this cut of meat. I’m also looking for wine with a little juiciness, as pork tenderloin BEST WINE TO PAIR WITH LAMB CHOPS A great pairing with lamb chops is the superb wine of Lebanon, Château Musar. It’s a blend of Cabernet Sauvignon and Cinsault, often containing some Syrah and Carignan too. BEST WINE TO PAIR WITH RIBEYE STEAK IntoWine asked our panel of experts to share their favorite wine pairings for ribeye steak: With such a vast sea of deep, dark, red wines available to the public, it can be difficult to identify a single wine for the perfect Rib-eye Steak. For me, this tender cut of meat takes me to California’s Central Coast, and to the rich, bold flavors of Justin’s Cabernet Sauvignon (about $25). We asked our panel of experts what they’d recommend for the perfect wine pairing: There’s something truly hedonistic about biting into a big juicy slab of prime rib. It brings to mind the decadence of a royal feast. Prime rib is one of the most tender, flavorful, and expensive cuts of beef, so it deserves a wine that won’t wimp BEST WINE TO PAIR WITH GRILLED SALMON Pinot Noir is the ideal pairing with grilled salmon—the light red fruits and earthy, savory nature of a good Pinot are a perfect counterpoint to the rich, slightly sweet and savory pink meat of the salmon. Since salmon is an oily fish, a Pinot with at least medium acidity helps to cut through and balance the dish’s oiliness. BEST WINE TO PAIR WITH SEA BASS Patagonian toothfish? That’s the real fish behind the so-called Chilean sea bass, not even in the bass family. Marketing geniuses correctly believed their coined name might make the fish more desirable. MAKING INCREDIBLE PINOT NOIR This is the first of a two-part series on making Pinot Noir. One of the greatest and most difficult wines to grow in the vineyard and make in the cellar is Pinot Noir. For all its troubles, Pinot Noir can also be one of the most rewarding wines to make. I can’t count the number of times I’ve heard a converted beer or spirits drinker say the wine that changed the game for them was Pinot BEST WINE TO PAIR WITH SEA BASS The California Central Coast, identified as Santa Barbara, San Luis Obispo (and its main wine region Paso Robles) and Monterey is California the way it used to be, or at the very least, California the way people want it to be: small towns, charming architecture, varied history of Missions and Indians, and coastlines for miles; a slow pace, clean air and a belief that no one real really works BEST WINE TO PAIR WITH FILET MIGNON The Madeira is a fortified wine that I feel actually restores the natural beef flavor and intensity that the filet mignon is missing. The wine I drink is the same wine Icook with

BEST WINE TO PAIR WITH CAMEMBERT CHEESE Camembert cheese is a cow's milk cheese with a creamy texture and a bloomy white rind. It begins as a relatively mild semi-soft wheel, but grows runnier and more robustly flavored with age. BEST WINE TO PAIR WITH CRAB CAKES A popular appetizer for a reason, crab cakes maintain numerous enthusiastic followers. Two innovators, Tom Douglas and Shelley Lance, even wrote the book: I Love Crab Cakes! 50 Recipes for an American Classic. An ongoing battle rages over who produces the best examples in Baltimore, but others swear by those hailing from the Carolinas. BEST WINE TO PAIR WITH PASTA WITH ALFREDO SAUCE Chardonnay. Specifically the 2006 Hanna Russian River Valley Chardonnay. One of the best things about Alfredo Sauce is the simplicity of its richness – a stick of butter, a quart of crème, salt and pepper, reduce, combine with pasta and voila ! Chardonnay is the perfect partner. Known the world over as the white wine, Chardonnay also has its BEST WINE TO PAIR WITH BEEF RIBS Rumor has it that beef ribs are often overlooked, as pork ribs are what most people visualize when they hear “ribs”. French politician Jean Glavany claims: “Those restaurant chains that are withdrawing beef ribs are . . . participating in this psychosis and should try to avoid it, . . . There is no question of banning beef ribs in our country.” And posts can be seen on American forums BEST WINE TO PAIR WITH BLUE (BLEU) CHEESE Focus: Depth of Flavor. Blue Cheese is a very deeply flavored cheese. It is salty, pungent, spicy and moldy. The texture is also very rich. One of the best ways to match this depth of flavor is with a sweet wine from Sauternes. The wine and food both need to have the same flavor “weight”. These experts help wine lovers protect their wine collections by inventorying them and giving them value. Obviously, a good wine appraisal and inventory are essential when wine collections are insured. An appraisal is often necessary for divorce settlements, estate planning, charity donations, tax purposes MOSEL-SAAR-RUWER: GERMANY’S OLDEST WINE REGION The heart of the wine region is the winding Mosel River. Two tributaries, the Saar and Ruwer Rivers, flow into the Mosel near Trier, Germany’s oldest city. The Mosel twists and turns as it flows toward Koblenz, where it meets the Rhine at the German Corner (“Deutsches Eck”). All along the river, vineyards plunge dramatically, almost ALL ROSÉS LEAD TO SOUTHERN FRANCE It’s hot. Ripe melon, spices, and citrus fruit BEST WINE TO PAIR WITH PORK TENDERLOIN IntoWine asked a panel of wine experts to recommend the best wine to pair with pork tenderloin: I like to go one of two different ways with pork tenderloin. This tends to be the most delicate, least “porky” portion of the pig, so I want a wine that’s not going to drown out the more subtle flavors of this cut of meat. I’m also looking for wine with a little juiciness, as pork tenderloin BEST WINE TO PAIR WITH GRILLED SALMON Pinot Noir is the ideal pairing with grilled salmon—the light red fruits and earthy, savory nature of a good Pinot are a perfect counterpoint to the rich, slightly sweet and savory pink meat of the salmon. Since salmon is an oily fish, a Pinot with at least medium acidity helps to cut through and balance the dish’s oiliness. BEST WINE TO PAIR WITH PORK CHOPS I know my mother shied away from cooking pork chops in the 1970s when the scare was on regarding worms from undercooked meat. This is the second vintage for a Red Wine Blend and I far prefer this to the 2015 version. it is a blend of 42% Zinfandel, 21% Petite Sirah, 19% "Port Grapes, and 18% Syrah. Yes, Port wine grapes can be a wide variety but I have no idea what they used and that the grapes are from Mendocino. But, for $20 retail, no need to get hung up on that. Right now it seems the Zinfandel and to a lesser extent the Syrah dominate the blend although that might change with time. It is made by Rich Parducci. This is a label created by golfer Ben Curtis and Rich Parducci. The wines are meant to be affordable (full retail is about $20). This Chardonnay was made in steel and uses no oak. Screw capped. Golden in color, with a bit of a copper hue. The nose is tight but with some air, it opens to show lemon balm, lemon grass, and just a hint of LemonHeads candy. On the palate, the texture is slightly oily. There is an interesting chalkiness to it and the lemon balm comes thru. It is steely and easy drinking. This drinks well on its own. Very refreshing. It has enough acidity to work well w May 08th, 2020Written by Loren SonkinRead full review

This is a surprisingly big and bold Pinot Noir. The surprise is more that it is from the Santa Lucia Highlands. The vines were planted in 2008. Although 2017 wasa bit lighter of a vintage in Sonoma/Napa, it would appear that down in Monterey, there was no issue in getting fruit ripe. Certainly not for this wine. It has a very pretty ruby/garnet color. Clear and bright. The nose shows coffee, black cherries, and a slight rhubarb. With air a bit of brown sugar emerges. On the palate, this is full bodied with light tannins. It has juicy red berries. There is some oak coming thru as May 05th, 2020Written by Loren SonkinRead full review

Tasted this as part of a virtual wine tasting during the Covid 19 Shelter in Place Order. These tastings are a fun and informative way to try some wines. This is a blend of 23 different vineyards to make an affordably priced wine. For those seeking a wine in this style, this offers a nice value. it has a medium to deep gold color with some green swirls. The nose has plenty of up front toasty oak along with a bit of lemon chiffon and a hint of baked apple. On the palate, this has s very nice, slightly oily texture. The palate is similar to the nose. The oak is out front, but there is May 05th, 2020Written by Loren SonkinRead full review

This is a Rose from southern France. It is a blend of 60% Grenach, 20% Syrah, 10% Cinsault, and 10% Tibouren. Perhaps more than most springs, I am looking forward to staying home and sipping on some Rose as the weather gets nice/warmer. This is light salmon pink/orange in color. Very pale but bright and clear. It has a much bigger nose with nice strawberries, some hay and slight watermelon. On the palate, it has an interesting texture. A bit oily but also creamy. The strawberries really come thru on the palate. Refreshing and tasty. Good balance. Long finish. This drinks great o May 04th, 2020Written by Loren SonkinRead full review

My first time trying this New Zealand winery. Very impressed. This wine is barrel fermented and raised in barrel for eleven months but shows no overt signs of any oak. Probably just a bit of new oak barrels. Golden in color with a tinge of copper. The nose is very nice with orange, stony minerality, and lime zest. This has a very nice texture. It is creamy yet steely if that makes sense. On the palate, it starts with a crisp stony minerality followed by a citrus mid-palate and then all notes crescendo for a full and long finish. It is also delicious. The finish is long. Of course May 03rd, 2020Written by Loren SonkinRead full review

`This is a 100% Cabernet Franc froma Co-Op in Saumur. An inexpensive red, it is an excellent value. Inky purple in color. The nose is light but has cherries, plums, green bell pepper and a bit of a steely note. Medium bodied. On the palate, there is more present. Plums and cherries with a bit of a green streak. Light tannins. With air the red fruits come out more. Moderate finish. This probably won't get better but should drink well for five to seven years. It is better with a bit of food. Stews or Chili would work well. For $13, its hard to expect more from a red. April 29th, 2020Written by Loren SonkinRead full review

From one of the top red producers in the Loire Valley. 2005 was a strong vintage and allowed the Cabernet Franc to get ripe. This was a great showing for this wine. It was identifiable as the Loire with everything good about it. Deep ruby in color, mostly opaque and bright. The nose is great. Earthy, slight barnyard, cherries, slight black cherries and an interesting clove note. With air, a fresh tobacco note comes out. On the palate, this is soft. A nicely layered and complex texture. Layers of cherries, slight black cherries, fresh hay and slight earthiness. There are still lig April 29th, 2020Written by Loren SonkinRead full review

This is a Chenin Blanc from the central part of the Loire Valley. Medium "olde" gold in color with just a touch of copper. The nose is very nice with lots of minerals, a bit of salinity and some orange peel. On the palate, this is dry. Nice citrus with some orange pith and underlying minerality. Slightly tart on the finish. A lovely, slightly oily texture. Chenin ages very well and this is still drinking well. April 29th, 2020Written by Loren SonkinRead full review

Nice to revisit this one. It's been a few years. This is drinking great although it still is probably not at peak. Deep ruby in color, opaque and bright. The nose is deep and very nice with cassis, smoke, slight cedar. Very concentrated, it opens in the glass. Likewise, the palate is very concentrated. Cassis with slight earthiness and char. Long finish. This still has some lighter tannins. This will drink well for at least another decade and probably two. It drinks well on its own but will work well with roasted meats or vegetables.
