Method. Stir together the wine or sherry, brandy, lemon juice and rind and let it sit in a bowl overnight. The next day transfer this to a 2- to 3-quart bowl, add the sugar, and stir until it is dissolved. Add the heavy cream very slowly, stirring it continuously to blend thoroughly with the other ingredients. Add the nutmeg. JIM BEARD'S SHORTCAKE RECIPE Preheat the oven to 450°F. Just before baking brush the tops of each shortcake with melted butter and sprinkle with the remaining sugar. Transfer the chilled shortcakes to a parchment-lined baking sheet. Bake on the center rack of the oven until golden and firm to the touch, about 15 minutes. Remove from the oven and let cool. SWEETBREADS À LA CRÈME RECIPE Method. Blanch and trim the sweetbreads and cut into small dice. Sauté the mushrooms and sweetbreads in butter for 4 to 5 minutes and combine with the rich cream sauce. Heat through and correct the seasoning. Spoon into hot patty shells or bread cases and garnish with tiny sprig of parsley. TEXAS-STYLE OVEN BRISKET RECIPE Method. Move the oven rack to the center position and preheat the oven to 275°F. In a small bowl, stir together the pepper and salt. Spread the pepper mixture evenly across a large baking sheet. Remove the brisket from its packaging. Dampen a kitchen towel and rub the wet towel over the entire brisket. Place the brisket, fat cap down, on the ARMENIAN RICE PILAF RECIPE Method. Stir with a wooden spoon periodically to ensure the spices do not burn, until you begin to smell the aroma of the spices, about 10 minutes. Remove the pan from heat and set it aside to cool completely, about 1 hour. This step is crucial because if the CRABCAKES WITH RÉMOULADE RECIPE Heat 2 tablespoons of the oil over medium-high heat in a large, heavy sauté pan or cast-iron skillet.
