Shredded steamed chicken & sliced prawn on top, a soup base that’s enhanced by prawn oil, and along those yummy Ipoh bean sprouts and chives, makes for quite a unique taste. This dish outside Ipoh usually can capture some of these elements but KYSPEAKS | ARCHIVES / APRIL | 2021 Last weekend after a morning hike at Taman Tugu (best jungle trail in the city), we decided to stop over in KL for breakfast prior to my afternoon futsal session. Initial plan was ICC Pudu but alas, the place was way too packed, and this is when I recalled I’ve always wanted to check out San Peng prawn mee, which coincidentally is just a few minutes away from Pudu. KYSPEAKS | TEO KEE AT ULU YAM, WITH THE OLD CHEF KY eats – Local Khmer Dishes and Dessert at Siem Reap Old Market, Cambodia. KY eats – Khao Jao Thai Restaurant at Thong Lo, Bangkok. KY travels – Komodo Dragons at Rinca Island and Pink Beach, Flores,Indonesia.

If you’re in Ipoh, you owe it to yourself to tapao a few birds back home. P/S: there’s another shop selling the same thing, and to my untrained tongue, they tastes pretty similar. Kah Hiong is located at Hilltop (and quite a few other locations), a stone’s throw away from the popular Fatt Kee seafood noodle, and just around 10+ minutes away from the city center.. Ngau Chap Mee Kan Lao. Having spent most of my time in KL and Penang, it is easy to have a false sense of perception on how much street food costs. A “standard” plate of hawker dish is supposed to be around RM 4.50or RM 5.00, no?

When I moved to KL from Penang many years ago, one thing that I was never able to really get used to is the taste of sambal. In this region, sambal is often a pretty sweet affair, prepared with oil, galangal, turmeric, sugar, and involves process of cooking. Leave this field empty KY COOKS – SINFUL BACON FRENCH TOAST __ June 3, 2020 __ 4 Comments This is my version of bacon French toast, one that led me to buy a loaf of bread after not having any for more than two months since the start of MCO (movement controlled operation) thanks to Covid-19 pandemic (this description may come helpful years later). There are many French toasts recipes, this one is mine.Ingredients:
* 2 pieces of bread
* 1 egg
* 2 tablespoon of butter * 2-3 pieces of bacon* 1 piece of cheese
Instructions:
* put the egg in a bowl, beat & mix with butter* pan fry bacon
* when you have enough oil released from bacon, fry bread after dipping in egg+butter * place bacon on bread once crispy * place cheese at the end * eat while hot! Green bits are optionalHappy eating!

So yah, during this MCO period, I do start to miss having it, hence I made it a point to re-create a version of my own the other day with some leftover pork bone radish soup that I had the other day. Here’s how you can do yours too with this simple recipe.Ingredients:
* soup stock (I used leftover pork base radish soup, you can usechicken soup too)

* beef ball/ fish ball * cili padi and soya sauce as condimentInstructions:
* cook the meat in soup stock till soft * remove and cut into bite size * add kuih teow in soup and cook for a minute or two* add bean sprouts
* serve with spring onion on top * a dash of garlic oil and lard would work well here too (Ididn’t have)

Leave this field empty KY COOKS – SOUS VIDE PORK CHOP WITH FERMENTED TOFU MARINATE __ May 27, 2020 __ 11 Comments Pork chop has always one of my simple guilty pleasures, a slab of loin with a layer of fat can deliver a rather satisfying meal perhaps second only to steak in its simplicity and taste, but at 1/5 the cost (if you count only the cost of meat). The tricky part about pork though is that if you don’t get it “just right”, it’s easy to have an overcooked piece of dry meat that takes 1/2 hour just to chew, or worse, under cooked and be friends with your toilet for the next day or two. Beef is a lot more forgiving in that regards. SOUS VIDE to the rescue then! Ever since I bought myself a little sous vide stick (the cheapest version of Anova), I’ve been using it for pork chop exploit quite a few times, I want to share with you myrecipe today.
Ingredients:
* 250 gram pork chop, preferably with a layer of fat * 2 tablespoon of fermented tofu for marinate * asparagus + garlic (or any side dish you wish to have) * 2 tablespoon butter/cooking oilInstructions:
* marinate pork chop with fermented tofu (preferably overnight),seal in vacuum bag
* sous vide pork chop at 60 Celsius for 2 hours * remove from water bath, heat up frying pan till smoking hot, pan sear for 1 minute each side, remove and let rest for 4-5 minutes * fry asparagus with butter & garlic while pork is resting, serve asside
* enjoy!

Anyway, I remember that one of my favorites of such soup dishes were the SALTED FISH BONE TOFU AND PORK SOUP. So when I was at Kota Kinabalu not too long ago, I made it a point to get myself some good quality whole kurau salted fish that includes the boney bits. So here’s the recipe I got from mom.Ingredients:
* salted fish bone (preferably ikan kurau) * a bulb of garlic, peeled * an inch of garlic, sliced * spring onion, cut into 2 inches length * pork slices, 300-500 gram* tofu, 2 blocks
* 2 liter of water
* 4-5 tablespoon cooking oilInstructions:
* soak fish bone for half an hour * fry garlic, ginger and fish bone till fragrant * add pork slices and brown the exterior * add water and bring to boil for at least half hour * add tofu for the last minute, add spring onion too Comfort food for rainy days for sure!RELATED POSTS:

Leave this field empty KY COOKS – STIR FRY GREEN PEPPERCORN BEEF __ May 17, 2020 __ 12 Comments I was raised in a place in Penang called Pepper Estate, essentially a small housing “kampung” with mostly “grade 3” houses arranged haphazardly along narrow and steep roads. What it does not have though, is pepper plant. At my current place, perhaps to remind myself of my origin, we planted a peppercorn plant at the garden, and the little thing has grown over the years and start to bear fruits on quite a regular basis. Birds usually got the most of it, but when I’m fast enough, I get myselfsome too!
While we mostly have peppers in dried & powdered format, raw green peppercorn does have its use, especially in Thai cuisine. Today I’m going to share my first dish with this ingredient – STIR FRY GREENPEPPERCORN BEEF
Ingredients:
* 200 gram beef, thin slice * few stalks of spring onion* 1 red chili
* 3-4 cloves of garlic* 1 small red onion
* 1 tablespoon corn starch * 2 tablespoon rice wine * 1 tablespoon soya sauce * 1 tablespoon dark soya sauce* cooking oil
* a few stalks of raw green peppercorn, crush likely with pestle andmortar
Instructions:
* with some corn starch on the beef, marinate with rice wine, dark &normal soya sauce
* fry the beef half way and set aside (just about 1+ minutes) * heat up oil and fry garlic and onion till fragrant* add peppercorn
* add back beef and fry for another minute or so * finish off with green onion and red chili Result is a pretty delicious and fresh tasting beef dish with a bit ofa kick. Try it!
