Place bacon in a foil-lined baking sheet and bake in the oven for 25- 30 minutes tunnel it’s cooked to your licking. Crumble the bacon and set it aside to drain. I was really excited that Ort Farms in Long Valley, had cabbage in their CSA share this week! I eagerly combed through my recipe folder looking for the perfect way to cook it and found this really yummy recipe from Rachael Ray.After a little tweaking (removing the 2 tbs. of sugar and using white cabbage instead of red), I made a rockin’ great dinner. 5 SIDE DISH RECIPE FOR FALL In a large Dutch oven over medium-high heat, cook pancetta until crispy, about 5 minutes. Transfer to a paper-towel-lined plate. Add garlic, chard stems and thyme to the pan drippings and cook until shallots being to brown, 4 minutes. Add chard leaves. BAKED SALMON IN WHITE WINE Directions: Preheat oven to 450 degrees. Place salmon on a rimmed baking sheet and season with salt and pepper. Roast until cooked throughout, about 15 minutes. Meanwhile, in a small saucepan, melt butter over medium. Add flour, and cook, whisking, 1 minute. Reduce heat to a simmer, and cook until liquid is reduced by half, about 8 to10 minutes.
OVEN BAKED BEEF BRISKET WITH ONIONS & CHILI Directions: Preheat oven to 325. Lay brisket in a large roasting pan or glass dish then top with onion slices. Combine sugar, stock and chili sauce in a large bowl and give it a good stir to combine. Pour sauce evenly over onions and brisket then cover can tightly with foil or a lid. Bake until brisket is very tender, about 4 hours. OVEN BAKED BUTTER SMASHED POTATOES Oven Baked Butter Smashed Potatoes is a recipe sent from Heaven for butter AND potato lovers! It’s crispy, flavorful, delicious and a real crowd pleaser! We can’t get enough of them over here! Butter – sometimes I couldn’t imagine cooking without it. It serves as a lubricant, flavor enhancer, and a means to transfer flavors. PAPPARDELLE WITH FRESH CHERRY TOMATOES, MOZZARELLA & BASIL 7 ounces cherry size fresh mozzarella balls, halved. ½ cup fresh basil, chopped. Directions: Put a large pot of water on to a boil to cook your spaghetti. Start by preparing the sauce. Slice about ¾ of the red and yellow cherry tomatoes in half, leaving the remaining ¼ of the tomatoes whole. Heat 2 tbs. olive oil in a large saucepan. POTATO LEEK SOUP RECIPE Directions: In a large saucepan on medium heat, add olive oil. Add all of the diced ingredients and sauté. Cook for 10 minutes until the onion and leeks are slightly golden. Add chicken stock to the pot followed by potatoes. Bring to a boil and simmer for 10-15 minuteswith the lid on.
GRILLED SAUSAGE KABOBS & WHITE WINE Grill kabobs over medium heat, turning the skewer frequently by lifting one end of the skewer with tongs and turning it with a fork. Kabobs are done when sausage is browned but apples and red onion are barely tender, about 15 minutes. Serve hot.
