Take the back of a wooden spoon and make a little dent/hole in every ball of dough ( do not press the back of the spoon right through). Fill the hole with a little bit of apricot jam. Place your stick blender over the egg yolk and start running the machine. Slowly add the melted butter and voila. in seconds you have hollandaise. You can season with salt, pepper and maybe tarragon, but to me, it is justperfect.

Now make a foil tent to cover the meat.PICKLED ROAST PORK
Bring the liquid to the boil and reduce the heat. Allow the pork to simmer in the pot for at least 1 – 11/2 hours. The pork must be soft but not falling apart. Remove the pork from the liquid and keep in a bowl. Place the cloves in the fat layer. Place the pot back on the stove and cook the sauce and reduce to about 1/3. BLUE CHEESE POTATO BAKE Method. Slice the potatoes very thinly with a sharp knife or a mandolin. Pack a layer of potatoes in the bottom of a oven casserole ( 20 x 25 cm).
