SRI LANKAN FISH CUTLETS Instructions. Boil the potatoes with 1 teaspoon of salt in a saucepan for 10 minutes or cook until tender. Peel off the skin and set aside. Heat oil in a wok and add cumin seeds and ginger garlic paste. Fry for 1 minute. Add green chilies and onion, cook until the onions starts to brown. Put the flour (ground rice), egg, salt, sugar, thin and thick coconut milk along with soaked marie biscuit. Add onion and sauté for 2 minutes. Add soaked cashew nuts and fry for 2 minutes. Add chili powder, turmeric, coriander and cumin powder alongwith salt.
KANGKONG STIR FRY
Separate the leaves from the stem. Set aside. Heat the oil in a pan and add the mustard seeds when they start to sputter garlic and fry for 1 minute until fragrant. Add shallots and sauté for 2 minutes. You can add broken maldive fish or dried prawns at this time. Add washed kangkong and stir fry on a medium high heat for one to twominutes.
AMMA’S CHICKEN BIRYANI Add sliced tomatoes along with chili powder, coriander powder, garam masala powder, turmeric powder and salt. Saute for 1 minute and then add drained rice. Add cooked chicken and mix well with other spices. Add water and diluted curd mixture and taste the salt. Mix Kesari powder with 2 tablespoons of water and then add to the Biryanimixture.

MUSHROOM MASALA RECIPEI HOW TO Saute the onion until soft and slightly brown. Add the sliced mushroom and sliced tomato and stir the mushrooms. Cook the mushrooms for 2 minutes. Now add the red chilli powder, coriander, turmeric and salt. Add Roasted curry powder along with garam masala powder. Cook for 10-15 minutes or until the mushrooms are soft and cooked well.
