SIMPLE {STRAWBERRY WATERMELON SPARKLING SANGRIA} Combine vodka, key lime juice, chopped strawberries and chopped watermelon in a large measuring cup. Let sit for approximately 1 hour. Use a large strainer to press the watermelon through, so that only the juice is used not the thick watermelon pulp. Add GREEK YOGURT BLUEBERRY BANANA BREAD Instructions. Preheat oven to 375 degrees. Start by combining flour, baking powder, salt in a large mixing bowl. In a separate bowl, mash bananas with a fork until they are gooey and liquid-like. Add eggs, vanilla and brown sugar mix thoroughly. Add greek yogurt. Whisk until everything is well combined and there are no lumps. MEDITERRANEAN PAN-FRIED ENCHILADAS Repeat with the rest of the tortillas and filling. (Recipe will make 8-10 enchiladas) Heat 1 tbsp. of oil over medium heat in GreenPan skillet and place 4-6 rolled tortillas (at a time), seam side down into the pan and sear on each side for about 5 minutes per side. When flipping, carefully use a spatula so that the filling doesn’t comeout.

BOURBON TILAPIA W/BAKED SWEET POTATOES & PEACHES Move the sweet potatoes to the edges. Dip the tilapia in the marinade and lay flat in the center of the casserole dish, flat. Pour remaining marinade on top. Add sliced peaches around the edges on top of the sweet potatoes. Bake for an additional 25 minutes, or until thoroughly cooked. SOUTHWESTERN QUICHE ON A SWEET POTATO CRUST This Southwestern Quiche is a must for an upcoming weekend brunch this summer. You will love its naturally gluten-free crust, made out of Cascadian Farm's organic fire roasted sweet potatoes and its Southwest flavors like jalapeño, cumin, mango, and cilantro. SILK ALMONDMILK + {VEGAN BANANA NUT MUFFINS} Combine chickpeas and almond milk in a large measuring cup. Use an immersion stick blender to puree until smooth. Combine all ingredients, except 1/4 cup walnuts, but including the chilled flax in a medium bowl. Spray a muffin tin with non-stick spray, or use coconut oil. Fill each cup to the top. PURPLE SWEET POTATO FRIES WITH HERBY TAHINI SAUCE Instructions. Preheat oven to 425 F. Wash potatoes well, pat dry and slice into even-sized sticks. Toss fries in oil, starch and salt. Optional: add everything to a large plastic bag, seal and shake well to coat evenly. Spread on baking sheet and cook for 15-20 minutes, until crispy and tender. Remove from oven and toss with more salt totaste.
