Prunes are a delicious yet often underrated baking ingredient. We are all aware of the healthy and nutritional element of these lovely fruits – good source of fibre and other compounds that help maintain healthy blood sugar and cholesterol levels. However, we do sometimes overlook their taste and versatility when it comes to cooking. CLASSIC WHITE CAKE WITH RASPBERRY COMPOTE To prepare raspberry compote, cook raspberries, cornstarch, sugar and water in a small saucepan until the berries start to break down, about 10 minutes. Lower the heat and simmer until the compote is thick, about 5 minutes. Let cool slightly before pushing the compote through a fine sieve to remove the seeded pulp. Let compote cool completely. MINI CHOCOLATE GANACHE CAKES Directions: To prepare the cake, preheat oven to 350F. Grease and line a 9×13-inch sheet pan. In a large bowl, mix together sugar, flour, cocoa powder, baking powder, baking soda and salt. Crack in the egg, spoon in the sour cream, and pour in the oil and the EGGLESS CHOCOLATE MOUSSE CAKE Directions: Preheat oven to 350F. Line a 12 x 17 inch baking pan with parchment paper. In a large bowl, mix together sugar, flour, cocoa powder, baking powder, baking soda and salt. Spoon in the sour cream, and pour in the oil and the vanilla. Mix with a wooden spoon untiljust combined.
FATHER'S DAY GOLF CAKE Preheat oven to 350F. Grease three 5-inch cake pan, and line bottoms with parchment paper. In a large bowl, mix together sugar, flour, cocoa powder, baking powder, baking soda and salt. Crack in the egg, spoon in the sour cream, and pour in the oil and the vanilla. Mix with a wooden spoon until just combined. CHOCOLATE GANACHE MOUSSE CAKE Bake 20 to 25 minutes or until a toothpick inserted into the cake comes out clean. Let cakes cool completely in the pans. To prepare mousse, make a double boiler and bring the water to a soft simmer. Put the chocolate, butter and espresso in a heat resistant bowl and leave to melt. Put a mixing bowl in the freezer. STRAWBERRY RUFFLE CAKE WITH STRAWBERRY COMPOTE 5 to 6 fresh strawberries. Directions: Preheat oven to 350F. Grease three 8-inch cake pans, and line bottoms with parchment paper. In a large bowl, sift the flour, baking powder and salt. Set aside. Mix milk, melted butter and vanilla in another bowl. Set aside. EASY CHERRY PUFF PASTRY TART Preheat oven to 400F. Roll the puff pastry to enlarge it a little bit. Spoon the cherry mixture on top of the puff pastry sheet, leaving one inch boarder. Roll the boarders inward to create a dent. Brush the pie with the beaten egg. Bake for 18 to 20 minutes, or until pastry puffs up and turns golden brown. Serve with ice cream or whipped cream. CLASSIC CHEESECAKE + FOOD PROCESSOR PERFECTION COOKBOOK Press the mixture onto the bottom of the springform pan. Bake crust for 10 to 12 minutes. Set aside to cool. Turn down oven temperature to 250F. In a clean and dry food processor. mix cream cheese, sour cream, sugar, vanilla extract, lemon zest and juice until combined.
