Horchata! In recent news, this cinnamony rice-based drink was named the world’s most refreshing beverage by me. I always used to love cold horchata during these hot summer months, that is, until I switched to a plant-based diet and store-bought versions of this drink (which all contain dairy) went out the window. TARAHUMARA PINOLE RECIPE Step One. Preheat the oven to 350ºF. Then, start toasting the cornmeal and chia seeds. Add both ingredients to a skillet and toast over medium-high heat for 5-8 minutes. This step is essential, but can be tricky: If the heat is too low, the cornmeal won’t toast. If the heat is too high, it will burn. Keep a constant eye on it and stirregularly.
GOLDEN CHAI RECIPE / TURMERIC TEA RECIPE Step One. In a saucepan, combine all the ingredients except the almond milk and begin warming over medium heat. Use a whisk to stir regularly until all the spices are dissolved in the water. Allow to simmer over medium heat for about 10 minutes so that some of the water can reduce and thicken the syrup/concentrate. CHICKPEA CURRY RECIPE Take 1 teaspoon of each spice (cinnamon, coriander, cumin, turmeric, cayenne pepper, salt, cloves) and add directly into the cooking onions. Stir until well incorporated. Let the spices infuse into the onions for about 2 minutes, then add the garlic, ginger, and two cans of drained chickpeas and let simmer for 3 more minutes. HEART OF PALM RECIPE Step One. In a powerful blender, add the cashews, nutritional yeast, garlic powder, salt, and pepper. Blend until the cashews are pulverized into a powder. Add this mixture to a bowl and combine with the breadcrumbs and parsley (dried herbs are nice because they give the beige coating a more exciting look, but they really don’t addmuch flavor).
