ACTIVATE YEAST
* It is not necessary if you have instant dry yeast, but I like to do it. So warm up milk for about 20 seconds in the microwave-safe bowl or a cup until warm to touch, then add sugar and dried yeast. * Mix and allow the yeast to start to bubble. * When you see yeast get bubbly and thicken on the top it is ready. It usually takes about 3-5 minutes, depending on the temperature. Never use hot milk or water.PREP DOUGH
* Measure and combine flour, salt, sugar, PB2 Pure Peanut Powder, etc. Mix it together. * Add activated yeast. * Using the kneading attachment of your mixer start mixing slowly while adding 2 mixed or beaten eggs, room temperature/soften butter, and the rest of the warm milk. * Adjust mixer to a higher speed and keep kneading for about 3-4 minutes or until the dough is becoming a ball and pulling away from the sides of the mixer bowl. * Do not overmix, there is no need. The dough will be softer on the touch. Oil dough and cover. Place dough either in the oven or microwave so it could rise. If your oven has a proof setting this is a perfect time to use it, if not just keep it in the turned-off oven. Allow it to rise for the first time for about 45 minutes to up to 1hour.
* It will double in size. Knead, then allow it to second proof for another 45 minutes, knead. This is the time to place in the fridge for about 6-8 hrs./overnight before making rolls. _NOTE:_ You do not have to chill the dough however they do come out so much better, plus it is easier to roll out. After chilling, let it sit at room temperature for about 10 minutes before rolling out. This isoptional!
FILLING
* Split the dough into two equal parts. Roll out dough to 1/4 inch thick. The size is approximately (38cm) 15 inches wide and (53cm) 21 inches long. You do not have to split dough, but I liked these smallerrolls.
* Mix PB2 Powder with water to create spreadable Peanut Butter. Follow the directions in the back of the package. The spread needs to be just a bit thinner, so considers adding a tablespoon or two more. * It would really be hard to spread it is not. On top of PB spread, evenly add chocolate spread. You can add chopped nuts if you prefer. * Slowly roll the dough until you reach the end. Pull ends to have an even end. Slice it in half, then cut the cylinder into equal slices.These
two dough parts make 20-22 smaller rolls. * Place cut side up and evenly spaced 9 x 13-inch baking dish. * Cover pan with a cotton towel and set aside in a warm place to let rise for at least 30 minutes to one hour. if you have an oven with a proof setting place in the preheated oven for proof.BAKING

mouthwatering, and extremely easy to make. It is probably one of my favorites just because I absolutely love the combination of beef patty, cheese, and caramelized onions. I mean, who would not love this?! It is a sandwich of my foodiedreams.
My family went bananas over it. You see, my husband and I didn’t grow up eating it like many of our American friends. It was a completely new experience when I first made it compared to some of you eating it in your school cafeteria or diners. However, I can say that I am so glad that I was the one who introduced this American Classic Sammie to my family. Indeed! It is a must-have at least once a month. As I said, patty melt is a sandwich consisting of a hamburger patty with melted cheese and topped with caramelized onions between two slices of griddled bread, traditionally rye or marbled rye. However, sourdough or Texas toast usually is substituted in some regions, including the southern U.S.A. Well, It is unclear when the patty melt was precisely invented. There are records that it was served as early as the 1940s. * 1 1/2 pounds Laura’s Lean Ground Beef* 1 tsp Table salt
* 1 tsp Ground black pepper* 1 tbsp Olive oil
* 1/4 tsp Worcestershire sauce * 3/4-1 stick of butter, unsalted, divided * 10 oz Yellow onion, sliced * 6-8 slices Swiss cheese * 8 slices of Bread; we used Texas toastINSTRUCTIONS
* To Laura’s Lean Ground Beef, add 1/2 teaspoon salt, 1/4 teaspoon ground black pepper, olive oil, and Worcestershire sauce. Mix well until all ingredients are combined then divide the meat approximately into 4 equal portions (about 6 ounces each). Form each portion loosely into the thick burger to fit your bread slices, then make a deep depression in the center with your thumb. * Place on the platter, cover, and refrigerate for 15 minutes. * Meanwhile, turn the stove to medium and heat your skillet, griddle, or a frying pan then add unsalted butter. * When the butter is melted, add the onion, toss to coat in the butter. Toss every 2 to 3 minutes until the onions are soft and golden brown. About 12 to 15 minutes. Set aside! * You can grill burgers or use a skillet/griddle. Since it is a grilling season, I thought of making my burger on the grill. * For the grill: Grill the burgers until golden brown about 4 minutes on one side, flip, and grill 4 minutes for medium-rare. Please make your burger doneness your preferences. * If you are cooking on the sauté pan, skillet, or griddle: Heat the oil in the skillet or griddle over high heat until the oil begins to shimmer; Turn down the heat t medium, then cook burgers for 3-4 minutes on each side for medium-rare. When done set aside. * Spread a thin layer of butter on each slice of bread. * Place a slice or two of cheese, a tablespoon of caramelized onions, a burger, a bit more of carnalized onions and top it off with the cheese. Place another slice of bread on top. * Heat your skillet or a griddle, then toast the sandwich on both sides for a few minutes until golden brown and crisp, and the cheese is melted. GRILLED PORK CHOPS
Not only that, you are going to love these flavorful grilled pork chops, but I can promise you will make them all the time. Now, you will need any kind of grill to make them, of course. However, you can use your air fryer as well; 400F for 25-30 minutes depending on your preferences. I love my pork chops well done. Also, I like bits of burned pieces around the bone and meat in the middle tender. I think that’s my family preference as well. We eat this all summer long. Sometimes I make extra so we could have it during the week. They are just amazing to mix with rice. I usually eat it cauliflower rice since I am most of the time eating low-carb. I just cannot believe that I’ve never posted this recipe before. With ten years of blogging, sometimes we ignore the simplest recipes. This one does not require too much work or to have culinary school, but it is delicious, and I am sure you will enjoy it also. Grilling is my jam. I just love grilled food and could eat it every single day. What is your favorite food from the grill? I have so many, but definitely, burgers and ribs are at the top two, but I also love,love grilled fish.

* 1 tablespoon kosher salt * 1/4 tablespoon ground black pepper * 1/2 tablespoon ground cumin * 1/4 teaspoon of each herb: sage, rosemary, thyme * 6 10- to 12-ounce pork chops, bone-in * 2-3 tablespoons olive oilINSTRUCTIONS
* Set temperature to 450℉ and preheat your grill, lid closed for 15 minutes. I used the cherrywood pellets. GRILLED PORK LOIN SANDWICHESINGREDIENTS
* 2 slices of thick sandwich bread per serving, this makes about 10sandwiches
* 6 Pound Pork Loin, boneless, silver skin removed* Marinade:
* 1/2-inch piece of ginger, peeled * 2 green onions, cut into 1-inch pieces * 4 garlic cloves, crushed * 2 cups Teriyaki sauce * 3 tablespoons honey* 1/4 cup mirin
* 1/4 cup oil
INSTRUCTIONS
* In the large bowl, combine all the ingredients for the marinade,then place
pork loin in the marinade, cover and keep in the refrigerator for 6-8hours;
make sure to turn it around at least once.GRILL PREP:
* Open your Kingsford pellets bag. I used classic which is great foralmost
anything you want in your grill. Flavorful and strong. Wood pelletsare poured
into a storage container also known as a hopper. The pellets are thenfed into
a cooking chamber by an auger that is powered by electricity. * When ready to cook, smoke setting with the lid open. * Wait for the fire to start about 5 min, depending on the grill typeand
model.
* When ready to cook, set the grill temperature to 450F and preheatlid
closed for 15 minutes.GRILLING:
* Place the pork loin on the hot grill and turn every 2-3 minutes,closing the
lid between each turn, until pork loin is seared all around. Reduceheat to
300F. Cook until the meat reaches an internal temperature of 150F Remove from the grill and let rest for 15 minutes. Slice in 1/2" thickpieces.
ASSEMBLE:
* Place bread slices on the grill and allow it to get grill marks,1-2 min on
each side.
* Add condiment of your choice, such as mayo-sriracha, and place afew pork
slices on top of a bed of greens, shredded lettuce, mixed song greens,or
arugula.

* 4-5 ears of corn, par-boiled * 1 serrano chile, grilled and thinly sliced * 2 Tbsp. unsalted butter, melted * ½ cup cilantro leaves, chopped * 1½ avocados, cut into ¾" pieces * Cherry Tomatoes, slicedVINAIGRETTE:
* 3 Tbsp. fresh lime juice* Zest of one lime
* 1/4 cup oil
* 2 Tbsp. honey
* Kosher salt and ground black pepper to tasteINSTRUCTIONS
* Boil corn for full 5 minutes. * Prepare a grill for medium-high heat. * Brush each corn with butter; season with salt and pepper. * Grill, occasionally turning until kernels are very tender andcharred in
spots, about 15 minutes. Let cool slightly, then cut kernels fromcobs. Also,
grill serrano pepper until slightly charred. it is not necessarilymust grill
peppers, but the flavor is better. * Whisk lime juice, zest, honey, and salt to taste in to combine. Addcorn,
sliced cherry tomatoes, chile, and chopped cilantro to the vinaigretteand toss
to combine, season with salt and pepper. * Cover with plastic wrap and chill for about 2 hours so the flavorscould

INGREDIENTS
GALETTE DOUGH
* 1-1/2 cups all-purpose flour * 1/2 teaspoon granulated sugar * 1/4 teaspoon kosher salt * 4-1/2 oz., 9 tablespoons cold unsalted butter, cubed into 1/2-inchpieces
* 4 to 5 tablespoons ice-cold waterBLUEBERRY FILLING:
* 12 ounces blueberries (about 2 cups)* 1/4 cup sugar
* Pinch of salt
* 1/2 tablespoon lemon juice* Zest of one lemon
* 1 tablespoon cornstarch* 1 beaten egg
* 1 tablespoon regular or coarse sugarINSTRUCTIONS
GALETTE DOUGH
* In the bowl of a food processor, combine flour, salt, and sugar.Add butter,
and process until the mixture resembles coarse meal, 8 to 10 seconds. * With the machine running, add ice water in a slow, steady streamthrough the
feed tube. Pulse until the dough begins to clump together in the bowl.Test by
squeezing a small amount of dough together: if it holds, you are goodto go; if
it’s crumbly, add more ice-cold water, 1 tablespoon at a time. * Turn out the dough onto a lightly floured surface and knead once ortwice to
bring the dough into one mass. * Pat the dough with your fingers and palms to form a disc about3/4″ thick.
Wrap in plastic and transfer to the refrigerator. Allow it to rest andchill
for an hour.
MAKE A GALETTE:
* Preheat grill to 300° Fahrenheit. * Toss blueberries with lemon juice, lemon zest and sugar in a largebowl,
then add cornstarch
* Roll out dough on a lightly floured surface to a 10-12-inch round.You can also
divide and make a few smaller galettes. * Place rolled out dough in the oven/grill safe skillet, let theedges drape
over.
* Mound blueberries in center of the dough, leaving a 2" border. Fold edges over, overlapping slightly. Brush dough with beaten egg andsprinkle with
sugar.
* Bake galette until crust is dark golden brown and filling isbubbling, 45-50
