WELCOME TO SANFORD, THE HOME OF SUSTAINABLE SEAFOOD Orange roughy Hoplostethus atlanticus. Orange roughy. Orange roughy are widespread in deep New Zealand waters, at depths of 600 to 1,200 metres. Reddish in body, which fades to orange when captured, they are a very distinctive looking fish. It has pearly white fillets with a medium texture and course flakes, suited to most cooking methods. His first boat was the ex-pilot cutter, Foam, and his kauri-smoked snapper quickly became very popular.
