We've been going for 6 years since it opened. It's a homey, unpretentious spot in West Soho on Greenwich St, and sadly, we hadn't been all year because of the pandemic. In the meantime, Ned, the owner (used to be the sous chef at Prune in the East Village w/ Gabrielle EVERYDAY RICOTTA CAKE 1 cup sugar. 1/2 cup golden raisins. 1 1/2 cups flour. 2 tsp baking powder. pinch of salt. It's pretty straight forward, as are most of my cakes. You mix the wet then add the dry. Use a 9" springform pan that has been sprayed with nonstick spray and lined with a round of parchment paper. Pour batter into pan and bake in a 350F oven for 45minutes.

Lay chicken pieces in the pan, skin side down, to brown for 5 minutes. Turn them over and brown another 2-3 minutes. Scatter the sliced garlic into the hot fat, in between the chicken pieces, drop in the rosemary stems, and sprinkle the peperoncino over. KIMCHI ROASTED SALMON Chop the kimchi into smaller pieces and lay on top of salmon. Add the tablespoon of sesame oil and a bit of kosher salt & pepper. A small drizzle of olive oil on top of everything. 425F for about 18 minutes, depending on the thickness of the fish. When done, sprinkle with sesame seeds and sliced scallions. Serve on white rice w/ more sesameseeds.
JIM LAHEY'S NO KNEAD FOCACCIA Jim Lahey's No Knead Focaccia: (adapted from MY BREAD & Serious Eats) 500 grams (17 1/2 ounces, about 3 1/4 cups) all-purpose or bread flour (I used King Arthur Bread Flour) 15 grams (.5 ounces) 1 tbsp kosher salt. 4 grams (.15 ounces) 1/2 tsp instant yeast (I used Fleischmann's) 325 grams (11 1/2 ounces) 1 1/2 cups minus 1 tablespooncool water.
LITTLE PORTUGUESE ORANGE CAKES Preheat oven to 350F. Combine the flour, baking powder and salt and set aside. In a large bowl, beat the eggs, zest, sugar orange juice and melted butter with the vanilla. Slowly add in the dry ingredients to make a wet batter. Pour the batter 3/4 the way up SPRING ASPARAGUS & SMOKED SALMON CRUSTLESS QUICHE salt & pepper. Butter a 9" pie dish. Preheat oven to 350F. Save the asparagus tips for the top of the quiche, use the cut stems in the custard. Mix all ingredients together (except tips of asparagus) and pour into the buttered dish. Decorate the top of the pie dish w/ the asparagus tips. Bake about 30 minutes until puffed and golden. OTTOLENGHI'S GRILLED CAULIFLOWER SALAD W/ CAPER & DILL a big handful of arugula. 1 tbsp fresh dill, chopped. Lay out the cauliflower florets on a large baking sheet and drizzle w/ olive oil and kosher salt. Roast in a 400F oven for 20 minutes, turning once after 10 minutes. They should be nice and caramelized. Place in a large bowl with the cherry tomatoes and pour over half of thevinaigrette.
EASY SHRIMP & ASPARAGUS IN FOIL PACKETS Lay out 2 sheets of heavy duty foil on a baking sheet. Place defrosted frozen shrimp along side thin asparagus spears in the center of the foil. Sprinkle with kosher salt and pepper. Next step: add sliced garlic (or minced) to the packet (about a clove of garlic per packet). Lay a lemon wedge on top, and drizzle with a few tablespoons of white MESQUITE SMOKED BRISKET ON A GAS GRILL Line an aluminum pan with heavy duty foil. Make the spice rub and rub it on both sides of the meat, patting it down with your hands. Let the meat cure a bit with the rub for at least 4 hours, best overnight. Lay the meat in the pan FAT SIDE UP. You are only going to use one side of the grill, while keeping the other side completely turned off. GOOD IDEAS: LEFTOVER CHICKEN (W/ BROCCOLI & CAULIFLOWER Brush an 8" x 8" baking dish with some olive oil. Steam the broccoli and cauliflower florets for 2 minutes until bright and still firm. Lay the vegetables on the bottom of the casserole. Place the shredded cooked chicken on top of the veggies. Whisk together the sauce ingredients, including the grated cheese & curry. Season with salt &pepper.

OLIVE OIL POACHED LEEKS W/ RICOTTA, LEMON & HAZELNUTS Cook the leeks in a 250F oven for 30 minutes, until they cut easily with a fork. Remove the leeks to a platter. Place blobs of ricotta on top and zest of a lemon over the ricotta. Next, toast the hazelnuts in a toaster oven (careful, they burn easily) and scatter them over the salad. Garnish with mint leaves. We showed up when NYC indoor dining opened back up and had a wonderful simple dinner, and got a copy of his book "How to Dress an Egg".Strangetitle, I know.

A NEW KIND OF BROCCOLI SALAD, W/ WARM DRESSING & DATES You want an easy, make ahead recipe for your Thanksgiving? Make this broccoli salad. It's not your ordinary broccoli salad, but a raw salad, tossed with a warm dressing and chopped dates and pistachios. The longer it sits, the better it gets. It's from Bon Appetit's Healthyish website , and I have to say, it's pretty fabulous. Since I don't love raw broccoli (or any raw veggies for that matter), I cheated and steamed the florets for 1 minute and 30 seconds in the microwave in some water. It also set the color a nice green. The deliciousness here comes from the ras-el-hanout spice, which is a Middle Eastern spice known as "top of the house". It's going to be different from each spice trader, so find one you like. I mail ordered mine from the Spice House online. You heat the 2 tsp of spice with oil and garlic that has been grated on a zester (the only way I add raw garlic into dressings these days).
