Lemon Ginger Éclairs with Beer Caramel Topping. Easier than they look, and no frying makes these a simple and gorgeous way to make dessert. You need to prepare yourself for what I’m going to say, take a seat. These are not that hard. I’m serious. I’m grab-you-by-the-face-and-look-into-your-eyes serious. SOURDOUGH FRIED CHICKEN Sourdough Fried Chicken, the best fried chicken I’ve ever made! I read the other day that sourdough starters are a problem. As in: we are wasting too much flour by feeding and discarding on a daily basis. To which my brain responded with: yeah, I’m PUFF PASTRY CHURRO CURLS WITH CHOCOLATE STOUT DIPPING Preheat the oven to 425°F. In a small bowl stir together the brown sugar, white sugar, cinnamon, and salt, set aside. Roll the puff pastry into a rectangle on a lightly floured surface. Add the melted butter and beer together (warm again if the beer makes the butter seize a bit) then brush the rectangle with the mixture. SOFT BATCH BEER AND BROWN SUGAR COOKIES In the bowl of a stand mixer, add the butter and brown sugar. Mix on high until very well combined. Add the egg yolk and the vanilla, beat until light and fluff. Add the beer, beat until well combined. In a separate bowl, add both kinds of flour (bread flour is used to make chewier cookies), baking soda, baking powder, salt, cornstarch and SOUR ALE SOURDOUGH (STARTER & BREAD RECIPE) Instructions. Add ¼ cup room temperature starter, ½ cup flour, and warm water to a small bowl. Stir to combine. Cover loosely and leave on the counter for 6 hours or up to overnight. Add the remaining flour, ½ cup room temperature beer, and 1 teaspoon sugar to the bowl. Stir until combined. STOUT OSSO BUCO RECIPE Return the Dutch oven to heat, allow the bacon fat to get hot but not smoking. Sear the shanks in bacon fat until browned on both sides. Remove shanks from pot.
