RECIPES - THE GOURMET RD The Essentials Checklist is your ticket to a well-stocked kitchen and more enjoyable cooking! From pantry and freezer staples to fresh ingredients, these are the ingredients you’ll find most often in myrecipes.
BEEF TACOS WITH REFRIED BEANS Add the beans and sauté 2-3 minutes. Use the back of a fork to mash the beans. Transfer the mashed beans to a bowl and set aside. To the skillet, add the ground beef. Sauté 6-8 minutes or until beef is cooked through to 160 F, using a wooden spoon to break the beef into small pieces as it cooks. SWEET PICKLED RHUBARB In a large stock pot, bring a pot of water to a boil. In a medium saucepan, bring the apple cider vinegar, water, sugar and salt to a simmer. Whisk occasionally, until sugar and salt have dissolved. Pack rhubarb, ginger, pickling spice and whole cloves into a clean quart-size ball jar. Pour vinegar mixture into the jar and secure withthe lid.
DECONSTRUCTED EGG ROLLS In a small mixing bowl, whisk together soy sauce, vinegar, honey, sesame oil, Sriracha, fish sauce, garlic and ginger. Stir mixture into the skillet and bring to a simmer, stirring regularly, until slightly thickened. Distribute rice and pork mixture into 4 bowls. Top ITALIAN SAUSAGE, BELL PEPPER, AND SPINACH PASTA Instructions. Bring a large pot of water to a boil. Cook pasta according to package directions. Reserve ¼ cup pasta water, then drain. In a large skillet, cook Italian sausage until lightly browned, breaking it up into pieces with a wooden spoon. Add olive oil, bell pepper and spinach and cook 3-4 minutes or until spinach is wilted.COCONUT PANNA COTTA
In a small bowl, whisk together gelatin and cold water. Let sit 5-10 minutes. In a saucepan bring coconut milk and sugar to a simmer, whisking frequently, until dissolved. Remove from the heat and whisk in vanilla extract or paste. Pour hot coconut milk mixture into the bowl with the gelatin and whisk until completely incorporated. CAJUN AIR FRYER CHICKEN STRIPS Preheat the air fryer to 400 degrees. Coat the basket with cooking spray. Set up 3 shallow bowls, one with the flour, one with the eggs and Dijon mustard and one with the crushed cornflakes and cornmeal. Distribute the Cajun seasoning, salt and black pepper into each bowl and thoroughly whisk each to combine. SIMPLE SPAGHETTI WITH PEAS, GARLIC, AND PARMESAN Add garlic and cook until fragrant, about 30-60 seconds. Add pasta back in to the stock pot, then the pasta water and simmer until liquid is reduced by half. Remove from the heat and stir in the beaten egg yolks until it starts to thicken. Stir in peas and half the Parmesan cheese. Season with salt, black pepper and lemon zest and juice, totaste.

In a small bowl, whisk together gelatin and cold water. Let sit 5-10 minutes. In a saucepan bring coconut milk and sugar to a simmer, whisking frequently, until dissolved. Remove from the heat and whisk in vanilla extract or paste. Pour hot coconut milk mixture into the bowl with the gelatin and whisk until completely incorporated. DECONSTRUCTED EGG ROLLS Stir in salt and pepper. In a small mixing bowl, whisk together soy sauce, vinegar, honey, sesame oil, Sriracha, fish sauce, garlic and ginger. Stir mixture into the skillet and bring to a simmer, stirring regularly, until slightly thickened. Distribute rice and pork mixture into 4 bowls. Top with crispy wonton strips, green onion and sesameseeds.
SWEET PICKLED RHUBARB In a large stock pot, bring a pot of water to a boil. In a medium saucepan, bring the apple cider vinegar, water, sugar and salt to a simmer. Whisk occasionally, until sugar and salt have dissolved. Pack rhubarb, ginger, pickling spice and whole cloves into a clean quart-size ball jar. Pour vinegar mixture into the jar and secure withthe lid.
ITALIAN SAUSAGE, BELL PEPPER, AND SPINACH PASTA Instructions. Bring a large pot of water to a boil. Cook pasta according to package directions. Reserve ¼ cup pasta water, then drain. In a large skillet, cook Italian sausage until lightly browned, breaking it up into pieces with a wooden spoon. Add olive oil, bell pepper and spinach and cook 3-4 minutes or until spinach is wilted. STICKY GINGER BEEF SHORT RIBS Whisk together soy sauce, brown sugar, garlic, ginger, chilies and pepper in a medium bowl. Add the beef ribs, submerging them in the marinade. Place in the refrigerator, covered, for at least one hour. After marinating, remove the short ribs from the marinade and pat dry.Set marinade aside.

CORNFLAKE-CRUSTED BUTTERMILK CHICKEN Instructions. Preheat the oven to 375 degrees. Fit a baking sheet with a wire rack and coat with cooking spray. Place cornflakes, ½ teaspoon salt, ½ teaspoon black pepper, onion powder, garlic powder, smoked paprika and ¼ teaspoon cayenne pepper in a small food processor and pulse until cornflake pieces are just broken up (not in crumbs). SIMPLE SPAGHETTI WITH PEAS, GARLIC, AND PARMESAN Add garlic and cook until fragrant, about 30-60 seconds. Add pasta back in to the stock pot, then the pasta water and simmer until liquid is reduced by half. Remove from the heat and stir in the beaten egg yolks until it starts to thicken. HOW TO GRILL THE PERFECT BURGER Preheat the grill to medium heat or 350 to 375 degrees Fahrenheit. Form the ground beef into 4 equal-sized patties, about 1-inch thick; place them into the refrigerator until ready to grill. Season both sides of the patties with salt and black pepper. Brush theTACO LETTUCE CUPS
Instructions. Heat the oil in a large skillet to medium. Add the ground beef, chicken or turkey and sauté for 6-7 minutes or until fully cooked, breaking it up with a wooden spoon as it cooks. Add the black beans, chili powder, cumin, smoked paprika, onion powder, garlic CAJUN AIR FRYER CHICKEN STRIPS Preheat the air fryer to 400 degrees. Coat the basket with cooking spray. Set up 3 shallow bowls, one with the flour, one with the eggs and Dijon mustard and one with the crushed cornflakes and cornmeal. Distribute the Cajun seasoning, salt and black pepper into each bowl and thoroughly whisk each to combine. BLUEBERRY DATE MUFFINS Instructions. Preheat the oven to 350 degrees. Line a 12-cup muffin tin with muffin liners. In a bowl, stir together the flour, oats, baking powder, baking soda, salt and cinnamon until combined. In a separate bowl, whisk together the oil and brown sugar until fluffy. Whisk in the eggs, one at a OLD-FASHIONED HAM AND CABBAGE SOUP WITH POTATOES Instructions. In a large Dutch oven or stock pot, heat butter or oil to medium-high heat. Add onion and carrot and saute until just starting to soften, about 3-4 minutes. Stir in garlic. Add potatoes, cabbage and ham and stir to combine. Stir in thyme leaves, salt, black pepper and celery salt. INSTANT POT BEEF BARLEY SOUP Instructions. Turn the Instant Pot on the saute setting. Heat oil, add the diced beef and saute until browned on all sides. Add the onion, carrots, celery and potatoes and saute 3-4 minutes or until slightly soft. Stir in garlic, thyme, salt, black pepper, celery salt, drymustard and barley.
MEXICAN FRIED RICE
Stir in ¼ teaspoon salt and ¼ teaspoon black pepper. Transfer the eggs to a plate and set aside. Heat the oil in the same skillet to medium heat. Add the onion and bell peppers and cook 3-4 minutes or until slightly soft. Add the chorizo and cook 6-7 minutes or until browned, breaking up the sausage into small pieces with a woodenspoon.
