March 5, 2020. This is my mother in law, Cynthia Yandell’s, “Cheese Crock” recipe. I once posted a similar recipe on PIE with a companion recipe for flat bread, and I put chopped dried cherries on top. It’s great. I stand by that formulation. ButI’ll be honest, Cynthia’s version is better. Way better.MAINE LOBSTER BITES
Instructions. Chop the lobster meat into ¼ to ½” bits. Press the meat with a paper towel to absorb excess water. In a small bowl, mix the lobster and the mayonnaise, starting with only ¼ cup of the mayonnaise and adding more as needed. Mix in the celery, lemon juice, salt and pepper. Chill in the refrigerator until just before theparty.
HOMEMADE WHOLE GRAIN MUSTARD Combine the water, the mustard seeds, and the ground mustard in a small bowl. Cover the bowl and place it in the refrigerator overnight. The seeds will absorb the water. BOB’S MOM’S RHUBARB PIE Toss the rhubarb in the dry ingredients so that all pieces are coated. Set the bowl aside to sit for at least 15 minutes. Meanwhile, work on the dough. Remove the dough from the refrigerator. On a well floured pastry cloth, roll out the two disks of dough. Roll one into a round for a 9.5” pie tin. CHIPPED BEEF ON TOAST (S.O.S.) Instructions. In a heavy saucepan over very low heat, melt the butter. Add the flour, pepper, salt and paprika. Stir constantly until blended and smooth. Slowly add the milk, stirring constantly to avoid lumps. Continue to cook, stirring constantly, until smooth and thickened. Meanwhile, open the jar NO KNEAD REFRIGERATOR BREAD…YOU WON’T BELIEVE HOW EASY Preheat oven to 450 degrees. Carefully place a small pie pan, or other smallish pan, of hot water in the bottom rack (for steam) of the oven. My mother-in-law was a wonderful cook, and when I married her son, having never cooked a meal in my life, she gave me a small, 3-ring binder notebook with 5 or 6 of her recipes to start me off. REFRIGERATOR BREAD, AGAIN AND AGAIN Instructions. Weigh the bread flour and add it to a large container. Mix the yeast and salt into the flour. Finally, add the water and use a large sturdy spoon to stir the dough until it is completely moistened. Set the container on the counter and leave it to sit at room temperature for two hours.WHIPPING CREAM CAKE
Slow the mixer and add the flour and whipping cream alternately, beginning and ending with the flour, until it is all incorporated and the batter is smooth. Pour the batter into a well greased 9” x 13” baking pan and smooth the surface with a spatula. Bake in a 350 degree oven for 30 minutes. Check the cake with a toothpick at this point.COFFEE EXTRACT

Scatter the halved tomatoes and peppers in the pan. Sprinkle the fresh herbs over it all. Gently stir the mixture so that everything is moistened. Season the BLUE CHEESE COLE SLAW Instructions. In a large bowl, combine all of the above ingredients and toss to combine. 3.2.2708. I love this with barbecue, particularly brisket. I also serve it with grilled sausages. Cream the butter and shortening and sugar in a mixer at medium speed. Add the eggs and beat until well combined. Meanwhile, in a separate bowl combine the flour, cinnamon, baking soda, cream of tartar, and salt. Mix the dry ingredients together with a whisk.WILD BOAR SAUSAGE

DONNA’S GOOD LUCK POTATOES Instructions. Preheat the oven to 400 degrees. Scrub the potatoes and poke several holes in each with a fork. Bake until a fork pierced into one of the thicker ones meets little resistance, approximately 45 to 60 minutes. Cool potatoes briefly. SALT AND PEPPER: NOT SO SIMPLE Salt and Pepper: Not So Simple. Instructions. With a mortar and pestle, grind the spices together and mix them thoroughly. Set aside. In the bowl of a large food processor, combine the wild boar, pork shoulder and pork fat. Process the meat until it is thoroughly combined and uniformly BLUEBERRY CREAM CHEESE Place them in a small saucepan with the granulated sugar and the water. Bring to a gentle simmer, stirring occasionally, and cook for about three minutes. Remove from the heat and transfer to a heat-safe bowl to cool. You may place it in the refrigerator to cool. March 5, 2020. This is my mother in law, Cynthia Yandell’s, “Cheese Crock” recipe. I once posted a similar recipe on PIE with a companion recipe for flat bread, and I put chopped dried cherries on top. It’s great. I stand by that formulation. ButI’ll be honest, Cynthia’s version is better. Way better. NO KNEAD REFRIGERATOR BREAD…YOU WON’T BELIEVE HOW EASY Preheat oven to 450 degrees. Cream the butter and shortening and sugar in a mixer at medium speed. Add the eggs and beat until well combined. Bake until a fork pierced into one of the thicker ones meets little resistance, approximately 45 to 60 minutes. Cool potatoes briefly. SALT AND PEPPER: NOT SO SIMPLE Salt and Pepper: Not So Simple. Using twine, truss the tenderloin at 2-inch intervals to ensure even cooking. Allow the roast to sit at room temperature for 20 minutes before proceeding. Season the tenderloin with half of the salt. MARINATED FETA HERB MIX To make the marinated feta, add half of the oil to an 8 ounce jar and mix in up to a teaspoon of the herb mix. Stir to combine. Add the feta cubes and the remaining oil. Place the lid on the jar and shake gently to combine, allowing the herb mix to distribute throughout the jar. BLUE CHEESE AND HONEY…YOU WILL NOT BELIEVE HOW GOOD THIS IS This is so simple. Get a nice wedge of blue cheese, pour some honey over it, sprinkle it with chopped pecans or chopped walnuts and devour it. Use crackers or baguettes. I don’t want to torture logic to show you a set of photos but I also feel the need to state this obvious thing that gets lost in the shuffle of steaks wrapped in plastic at the grocery store. Without cattle there is no beef. Without ranchers there are no cattle. Without cowboys, cattle are just critters in a field mowing the lawn. With cowboys, cattle are doctored, accounted for, birthed, weaned, worked and moved from wandering critters to the world of food.
