THE VEGGIE TABLE

1 pound firm tofu, pressed for at least an hour. ¾ c milk *. ⅓ c mayonnaise. ½ t fine salt. Directions. Crumble the tofu and grate/mash until desired consistency. Add remaining ingredients and mix well. It will seem a bit too wet; this liquid will be absorbed in the next step. Chill for several hours and use as desired.BELL PEPPER SOUP

CARAMELIZED EGGPLANT Directions. Slice the eggplant into ¼-inch rounds and arrange in a single layer on the cookie sheet. Whisk together remaining ingredients and pour over eggplant. Flip the slices so that both sides are coated. Turn oven to 400 and wait for it to preheat (allowing the eggplant to marinate in the meantime). Bake 10-15 minutes, until very brown. HOW TO SOAK AND COOK BEANS AND LEGUMES Cooking Beans and Legumes. Whether reusing soaking water or adding fresh, there should be twice as much water as beans. Boil furiously, uncovered, for ten minutes. Skim off any foam that collects at the top, then cover, lower heat, and simmer for 1 hour. Stir in salt (½ tsp per cup of dry beans) and continue cooking until the beans aretender.

1 c chimichurri sauce. Directions. Preheat oven to 400. Combine oil and soy sauce in the baking dish and add the tofu in a single layer. Flip to coat the other side. Spread about ½ c of the chimichurri over the tofu and stab each piece a few times CRUDITÉS - THE VEGGIE TABLE Make the vegetables as appetizing and ready-to-eat as possible: rinse well, trim stems, remove spots and seeds, peel (if necessary), cut into sticks or rounds.
