THE VEGGIE TABLE
Squash Recipes. There are many varieties of squash, but the various members of the two main categories - summer squash and winter squash - are oftentimes interchangeable in recipes. Combine onions, peppers, 2 T oil, and spices in a large bowl, then transfer to cookie sheet. Bake for about 30 minutes, stirring every 10, until tender and golden brown. CARAMELIZED EGGPLANT Directions. Slice the eggplant into ¼-inch rounds and arrange in a single layer on the cookie sheet. Whisk together remaining ingredients and pour over eggplant. Flip the slices so that both sides are coated. Turn oven to 400 and wait for it to preheat (allowing the eggplant to marinate in the meantime). Bake 10-15 minutes, until very brown. HOW TO SOAK AND COOK BEANS AND LEGUMES Cooking Beans and Legumes. Whether reusing soaking water or adding fresh, there should be twice as much water as beans. Boil furiously, uncovered, for ten minutes. Skim off any foam that collects at the top, then cover, lower heat, and simmer for 1 hour. Stir in salt (½ tsp per cup of dry beans) and continue cooking until the beans aretender.

Here’s a variation on the classic red sauce version, with some extra vegetables. For meat eaters: Add meat to sauce or include a layer of meat. Maki Rolls. Maki rolls are a vegetarian relative of sushi. DAL - THE VEGGIE TABLE Dal. Dal or dahl is the Indian term for lentils, and in cooking refers to any of the many Indian dishes made with lentils. There are many variations ranging from simple to complex. This recipe is on the easy side. Wash the lentils thoroughly and drain well. Heat 2 T ghee over medium-high heat, then sauté onion, garlic, and chile for 1 minute.PISSALADIÈRE
Directions. Heat olive oil over medium heat. Add onions and sauté, stirring occasionally, for 10 minutes. Reduce heat to low, cover, and let cook, stirring frequently, for 45 minutes. The should become extremely soft and transparent, but not brown. Stir in thyme and rosemary and set aside. Preheat oven to 400.PLUM PUDDING
2 c zabaglione sauce. Directions. Place raisins and currants in food processor and roughly chop. Transfer to bowl and combine with bread crumbs, sugar, and spices. Stir in butter, then add eggs, a few drops of almond extract, and the marmalade. Taste and add more sugar/spicesif needed.
HOW TO SOAK AND COOK BEANS AND LEGUMES Cooking Beans and Legumes. Whether reusing soaking water or adding fresh, there should be twice as much water as beans. Boil furiously, uncovered, for ten minutes. Skim off any foam that collects at the top, then cover, lower heat, and simmer for 1 hour. Stir in salt (½ tsp per cup of dry beans) and continue cooking until the beans aretender.
CASCADILLA - THE VEGGIE TABLE Cascadilla. This dairy-based, traditional Jewish soup is light and refreshing. Mince cucumber, scallion, garlic, dill, and 4 mushrooms, then combine with tomato juice, yogurt, salt, and pepper. Purée above ingredients. Either way, cover bowl and chill for at least 30 minutes. When ready to serve, thinly slice the last mushroom, and garnishBELL PEPPER SOUP
1 t red pepper flakes. 1½-2 c vegetable stock. Directions. Heat the olive oil in the large saucepan. Add the onion and sauté for 3-4 minutes. Add remaining ingredients except the stock. Cover, reduce heat, and sauté, stirring occasionally, until the peppers are tender, about an hour. Pour half of the soup into the blender and puréePAN-FRIED SEITAN
Directions. Cover the bottom of the frying pan with a thin film of oil and heat over medium heat. Line the plate with paper towels. Put the flour in the bowl and press each piece of seitan into it to coat both sides. Fry for 2-3 minutes, until golden brown, then flip and fry the other side.
