AUTHENTIC MEXICAN TAQUITOS Preparation: Sauce: Bring water to a boil and add chopped tomatoes, chili peppers, onion, and garlic. Cook for ten minutes. Remove from the heat and drain the majority of the liquid (leaving just a little). Blend the ingredients and season to taste. Season the chicken to taste. Place one spoonful of the sauce in each tortilla and roll it up QUESO BLANCO AND SPINACH STUFFED CHICKEN BREASTS With toothpick, skewer each opening of chicken closed. Preheat oven to 425°F. In 12-inch skillet over medium-high heat, in remaining tablespoon oil, cook chicken breasts until browned on both sides. Remove to plate. WHO WE ARE - TROPICAL CHEESE Tropical Cheese began as the dream of Rafael Mendez. Born in Las Villas, Cuba, Mendez is the youngest of seven children. His family owned and operated a small cafeteria business on the island, where he often helped his father in his free time. By observing his father, he developed a strong work ethic and sense of humility which would prove to be invaluable to his future achievements.
