Aioli Sauce: Combine mayonnaise with sour cream, lemon juice, parsley and garlic. Season with salt and pepper to taste. En una olla con agua colocar el zapallo y la papa amarilla y llevar a hervir hasta que estén cocidos. Licuar todo con el agua cuando aún esté caliente. Una vez licuado, vaciarlo en un recipiente. Reservar. En otra olla, derretir la mantequilla y agregar el ajo molido y dejar que se dore. Agregar el zapallo ANTICUCHOS DE CORAZON DE RES Anticuchos: Limpiar el corazón de res quitándole grasa y venas. Cortar en trozos de 2 ½ a 3 cm (3/4 a 1 pulgada). Colocarlos en un bol y verter encima la mezcla de la marinada. Dejar el corazón de res marinando mínimo 12 horas. Ensartar 3 trozos en cada palito deanticucho.
